Make pesto with coriander, olive oil, pine nuts, lemon juice and basil all whizzed up together to make a chunky paste. Spread that on top of the fish and bake in aluminium foil parcels. You can tell it is ready by opening the parcel and see if the fish falls apart.

This recipe is good for when people come over because you can make the paste in advance and a salad in the fridge and when they come over just stick the fish in their parcels, spread the paste, put them in the oven and then spend your time talking and pouring wine rather that slaving over a stove top.

They will think you are brilliant!

marinade the fish in some marinade -find one ready to use at the grocery store-or make one with some olive oil, spices such as parsley, some vnegarette dressing, some lemon and orange juice and let the fish sit overnight in the solution, make sure that the fish is fillet and has not the skin on it! the best fish to use is salmon since it is easy to work with! you can let the fish sit in the marinade either homade or bought as long as you want to but the longer it sits in it the more flavor the fish picks up! then grill it and make some grilled asparagus, onions, as well as some mashed potatoes and squeeze some lime or lemon on the fish before serving it! top it off with a garnish or parsley and some lemon slices!

Get some nice big pieces of fish fillets. In each one make three slits, rub with a little salt, seasoning of your choice a teeny sprinkle of red pepper powder ( this brings out the flavour- very little though!) OR you can spinkle it with a little tabasco instead. rub all over so it gets into the fish. Slice some lemons. leave all over fish in a dish for 30 minutes in fridge.

Mix a little olive oil, finely chopped parsley ( another choice is melted butter with crushed garlic). leave aside.

Grill fish and keep basting with ther olive oil mixture- just takes a few minutes- turn over too and baste again. After a few minutes turn back over, insert lemon slices in slits, bast a little more before cooking time os over.

Serve hot with Asparagus or other veggies of your choice. Delicious!!

Serve with a romaine salad with lots of tomatoes and cucumbers.

Tilapia with Lemon

8 x tilapia filets
4 x lemon
Italian style breadcrumbs or regular crumbs with parsley
butter spray optional
Line small baking dish with foil, and spritz with nonstick spray. Rinse filets, and lay in dish. Spray lightly with butter spray, and squeeze half the lemon over both. Coat evenly with crumbs, and squeeze a few more drops of lemon over each. Bake for 20 minutes at 350, uncovered. Squeeze other half of lemon over fish before serving.

"Spinach Crab Chicken" - 4 servings

1/2 cup finely chopped onion
1/4 cup chopped fresh mushrooms
1/4 cup finely chopped celery
3 tbsp. butter
3 tbsp. all-purpose flour
1/2 tsp. salt; divided
1 cup chicken broth
1/2 cup milk
4 boneless, skinless chicken breast halves (6 oz. each)
1/8 tsp. white pepper
1/2 cup dry bread crumbs
1 (6 oz.) can crabmeat; drained, flaked and cartilage removed
12 fresh spinach leaves; chopped
1 tbsp. minced fresh parsley
1 cup (4 oz.) shredded Swiss cheese
Hot cooked rice

For sauce, in a skillet, saute the onion, mushrooms and celery in butter until tender. Stir in flour and 1/4 tsp. salt until blended; gradually add broth and milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from heat.
Flatten chicken to 1/4" thickness; sprinkle with pepper and remaining salt. In a bowl, combine the bread crumbs, crab, spinach and parsley; stir in 1/2 cup sauce. Spoon 1/4 cup down the center of each chicken breast half. Roll up; secure with toothpicks. Place seam side down in a greased 13x9x2" baking dish. Top with remaining sauce.
Cover and bake at 375* for 35-45 minutes or until juices run clear. Sprinkle with cheese. Broil 4-6" from heat for 5 minutes or until lightly browned. Discard the toothpicks. Serve with hot cooked rice.

Halibut is a nice, mild fish for people who don't like fish. Fish is actually really easy to bake and it doesn't take very long.

(By the way, you might check to see if your in-laws like fish, because many people don't.)

Grilled salmon.
Get fillet salmon wrap in tinfoil.
Use a lemon marinade with
sprinkled salt,garlic powder,black pepper, and for spicier red pepper.
allow the marinade to soak at least 1hour before grilling.
Cook till meat is flakey with fork.

If you cook the fish in oil, then put it on a bed of spinach with balsamic vinagraitte

All above are great suggestions.... but the only way to impress your in laws is to be yourself. If you want to prove yourself to them through cooking, go with something you and your partner both like. If they see that you cook to please him, you will in turn be pleasing them.
