I need a recipe for a dessert that is safe for diabetics to eat for my boyfriend's grandmother on thanksgiving. I am open to a lot of different types of desserts as long as they are for diabetics.

Diabetics should eat no sugar, and very little white flour or refined carbohydrates. You are wonderful for thinking and planning ahead for your boyfriend's grandmother. He is fortunate to have such a thoughtful girl friend.

Well, this is a very simple and quick dessert.

Take a large container of part skimmed milk ricotta cheese and sweeten to taste with a little Equal or other diet sugar and add a teaspoon of vanilla, mix well.. It does not have to be real sweet.as that you are going to do a simple topping with frozen berries (strawberries, blueberries, raspberries, blackberries, etc.) place 1 bag of these, your favorite, in a blender and add, again, a small amount of diet sugar. Save a couple of whole berries for garnishes.

Serve in a pretty glass, like a martini glass and drizzle a little of the berry topping over the top. Place one of the whole berries you put aside on top to garnish with a sprig of mint and a dollop of no sugar whipped cream. Don't serve real large portions, as she'll just need something a little sweet to top off dinner. Make sure you have a lot of vegetable dishes that she can fill up on green beans, broccoli, etc. Avoid corn, rice, potatoes, green peas, and other starchy veggies. Enjoy!

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. For me, the worst part of this horrible disease is the severe pain I constantly get in my feet. The pain is so bad that I avoid standing and walking as much as possible. I've got to tell you that within the first month, my feet stopped hurting altogether and I can now walk totally pain free.

This is easy. I make it a lot.
Diabetic Banana Pudding

1 box low fat vanilla wafers
1 large sugar free vanilla pudding mix
canned fat free milk
8 oz. light sour cream
8 oz. light cool whip
bananas

Line dish with vanilla wafers. Mix pudding according to directions, using fat free canned milk. (I use Pet. It looks gross, but tastes good in this recipe.) To pudding add: sour cream and 3/4 of cool whip. Mix tgouroughly. Spread a layer over vanilla wafers. Add a layer of sliced bananas. Make 3 layers starting with wafers and ending with bananas. Spread remaining cool whip over top. Crumble a few wafers and sprinkle over top. Chill at least 4 hours.

EASY PINK CLOUD DESSERT
In a large bowl, put one large carton cottage cheese
Sprinkle with 1 pkg. sugarfree strawberry or cherry jello (dry)
Mix well.
Add one can crushed pineapple (in juice)
Add 1/2 cup English walnuts chopped
Fold in 1 carton Cool Whip Lite
Refrigerate.

Ready In: 1 hr 10 min

Serves: 6

4 egg whites
3/4 cup sugar
1 tsp. vanilla
1 cup raspberries or sliced strawberries
1 cup blueberries or blackberries
1 square BAKER'S Semi-Sweet Chocolate
3/4 cup thawed COOL WHIP Light Whipped Topping
PREHEAT oven to 300°F. Beat egg whites in small bowl with electric mixer on high speed until soft peaks form. Gradually add sugar, beating until stiff peaks form. Blend in vanilla.
SPOON or pipe meringue mixture into 3 (4-inch) rounds onto each of 2 parchment or foil-covered baking sheets. Use a large spoon to make a large indentation in the centre of each round, building up the sides of each round as much as possible.
BAKE, 1 sheet at a time, on centre rack of oven 55 minutes or until meringue shells are dry and golden brown. Remove from oven; cool 1 to 2 hours on baking sheet or until completely cooled. Carefully remove meringues from parchment.
TOSS berries together; set aside. Place chocolate in small microwaveable bowl. Microwave on HIGH 1-1/2 to 2 minutes or until chocolate is completely melted, stirring after each minute. Fill meringue shells with the berries just before serving; top with whipped topping. Drizzle with chocolate.

How To Pipe
Spoon beaten egg white mixture into large resealable plastic bag; cut a 1/2-inch piece from one corner of bag. Pipe the mixture in a circular motion, then pipe a rim around the edge of the circle.

Make-Ahead
Meringues can be prepared in advance. Let stand, uncovered, at room temperature up to 8 hours before filling and serving.

1 MIX 1 cup water, 1 can (14 fl oz / 398 mL) Del Monte® No Sugar Added Crushed Pineapple. Microwave for 5 min. on HIGH.
2 ADD 1 cup Minute Rice and 1 sachet Sweet'N Low Brand Sugar Substitute. Cover and let stand 30 min. Refrigerate 4 hours.
3 STIR IN 2 cups Cool Whip Light Topping. Divide between 5 small bowls and sprinkle with a few toasted sliced almonds
