Taking it out the night before your anniversary will be fine. Congrats on it lasting this long!.....I mean, your cake. Not your marriage. ;)

I took mine out the day before & put it in the 'fridge. It thawed nicely. It tasted the same as the day we were married, it was awesome! My shower cake, frozen from that day, tasted exactly the same 3 yrs later !! We were amazed! We must have put a good wrap on those cakes. Both cakes, by the way, were not made by the same person, but I did have a professional home baker make each one. Neither one was made by a bakery, maybe that had something to do with it, I dunno. (p.s. it was cheaper too, believe it or not) Oh ya, Congrats on the 1st anniversary! Hope all is going well!

I took my cake out the day before, put it in the refrigerator, and let it thaw out. It did fine. Tasted great. Ours was also done by a home baker but she used a Pillsbury French Vanilla extra moisture Cake Mix (the kind with the pudding stuff already in it.). Also the more frosting is on there, the better off it is, the frosting also protects from the freezer burn. I think ours was wrapped in plastic and then in a box. That's been awhile ago... 11 years ago... Congratulations on the one year!!

It will thaw in your fridge in about 2-3 hours, I'd take it out that morning to consume it that afternoon.
Warning: year old wedding cake doesn't taste all that great. But it's the thought that counts!

Take it out one day before your anniversary because you don't want it to sit out for 2 days since cakes got dairy products in it and it can spoil. It doesnt take long for a cake to unthaw I did it and it was just as soft and tender the day I bought it 6 months ago.

Depending on how big the cake is, it should only take about 12 hours to defrost. I would give it 1 whole day for good measure.

Most people do not actually eat the anniversary cake as it's been frozen for a year and doesn't taste that great. Go to the bakery and have them make you a fresh one to match your top cake using the topper that you used. It usually costs under $20.00 to do this, and you can actually enjoy eating the cake.
