Anyone out there know of any tried and true chicken breast and or fish recipes? I have a 15 mo.old daughter that i will be feeding .Need some quick and easy recipes. Maybe some that I can easily just put in the oven. What kind of fish is good fresh,frozen I have never cooked fish before.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.


For fish, I recommend Tilapia. Cook it in a mixture of olive oil and a little butter until it turns opaque. Season with salt and pepper and a squeeze of lemon juice. Or flour it, eggwash it, flour it again and fry it in oil and serve with tartar sauce.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.


Garlic Chicken Breasts with Brown Sugar
This is so easy and very good!
Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts

Preheat the oven to 500F.

Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.

Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.

Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.

We love this one!! Southwest Chicken Chicken breasts(duh) 1 can of yellow corn 1 can diced tomatoes 1 can of black beans (rinsed well) 1 small onion diced 1 teaspoon cumin ( more or less depending on your tastes) 1/2 teaspoon chili powder (again, to your tastes) Mix all ingredients in a bowl and pour over chicken breasts. Cover and bake at 350 degrees for an hour. Serve over rice You can also cook this in a roasting bag! No mess!! Hope this helps!!

Actually fish is one of the easiest things to cook because its fast and if you season properly you will make it great every time. My favorite is a baked white fish, Cod, tilapia or any other good white fillet (No Bones) works ask your butcher for a good fish. Fresh or frozen works. Thaw if frozen by running under cold water for about 15 minutes. bake at 350degrees. put the fish on a baking sheet ungreased. salt and pepper with a little paprika and a pat of butter on each piece. bake about 7 to 10 minutes then flip the file ts and bake another 5 minutes. the fish should flake when you pull at it with fork. Squeeze a little lemon and you should be Good to go...

"Parmesan Crusted Chicken" - 4 servings

1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves
4 tsp. Italian-seasoned dry bread crumbs

Combine mayonnaise and cheese; spread on chicken. Sprinkle with bread crumbs; bake at 425* - 20 minutes, or until thoroughly cooked.


"Broiled Garlic Chicken" - 4 servings

1 envelope Lipton Recipe Secrets Garlic Mushroom Soup Mix
3 tbsp. olive or vegetable oil
4 boneless, skinless chicken breast halves

In medium bowl, combine soup mix with oil; add chicken and toss to coat. Broil until chicken is no longer pink.


"Campbell's One-Dish Chicken and Rice Bake" - Serves 4

1 (10 3/4 oz.) can Campbell's Cream of Mushroom Soup
1 cup water
3/4 cup uncooked regular white rice
1/4 tsp. paprika
1/4 tsp. pepper
4 boneless, skinless chicken breast halves

In 2-quart shallow baking dish, mix soup, water, rice, paprika and pepper. Place chicken on rice mixture; sprinkle with additional paprika and pepper. Cover; bake at 375* - 45 minutes or until chicken and rice are done.


"Campbell's Herb Roasted Chicken and Vegetables" - 4 servings

1 (10 3/4 oz.) can Campbell's Cream of Chicken Soup
1/3 cup water
2 tsp. dried oregano leaves; crushed
2 cups fresh or frozen baby carrots; thawed
4 medium potatoes; quartered
4 bone-in chicken breast halves
1/2 tsp. paprika

Mix soup, water, 1 tsp. of the oregano leaves, carrots and potatoes in shallow roasting pan. Top with chicken; season with remaining oregano and paprika. Bake at 400* - 50 minutes or until done. Stir vegetables.


"Herb and Garlic Fish" - 4 servings

1/2 cup mayonnaise
1/2 tsp. EACH dried marjoram leaves, dried thyme leaves, and garlic powder
1/4 tsp. celery seed
1 lb. fish fillets

Mix mayonnaise and seasonings. Place fish on greased rack of broiler pan, 2-4" from heat. Brush with half of the dressing mixture. Broil 5-8 minutes; turn and brush with remaining dressing mixture. Continue broiling 5-8 minutes or until fish flakes easily with a fork.

I love rock fish, its boneless and thick. Throw it under the broiler for about 10 minutes and its done. Flounder is also good, you can bake that. The only frozen fish i buy is Gortons. They have a wonderful popcorn fish that would be fun and is small enough for your daughter to munch on.

Chicken Breasts Stuffed with Italian Sausage and Breadcrumbs:

Tangy sourdough bread adds intriguing flavor to the herbed sausage mixture. Total time: 35 minutes.

1 (4-ounce) Italian sausage link
1/4 cup finely chopped onion
2 tablespoons finely chopped celery
1/4 cup dry white wine
1 (1 1/2-ounce) slice sourdough bread, toasted and crusts removed
1 garlic clove, halved
1 tablespoon minced fresh parsley
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
2 (6-ounce) skinless, boneless chicken breast halves
Cooking spray
1/2 cup fat-free, less-sodium chicken broth

Remove casing from sausage; crumble sausage. Heat a large nonstick skillet over medium-high heat. Add sausage, onion, and celery; sauté 5 minutes or until sausage is browned and onion is golden. Add wine to pan; cook 1 minute or until most of liquid is absorbed.

Rub each side of bread with cut sides of garlic; discard garlic. Coarsely crumble bread; add to sausage mixture. Stir in parsley, 1/4 teaspoon salt, and pepper. Let stand 5 minutes or until liquid is absorbed; toss to combine.

Place each chicken breast half between 2 sheets of plastic wrap; pound to 1/4-inch thickness using a meat mallet or rolling pin. Place half of stuffing on one side of each chicken breast half, leaving a 1-inch border around sides. Fold remaining half of each chicken breast over stuffing, and secure with wooden picks. Sprinkle chicken with remaining 1/4 teaspoon salt.

Heat a large skillet over medium-high heat. Coat the pan with cooking spray. Add stuffed chicken breast halves to pan; cook 3 minutes on each side. Add chicken broth, scraping pan to loosen browned bits. Cover, reduce heat, and simmer for 5 minutes or until chicken is done. Remove the wooden picks; slice breasts in half. Serve immediately.

Yield: 4 servings (serving size: 1/2 chicken breast)

since your child is fifteen months old i would suggest fish sticks and chicken fingers. they are softer for your child to eat and you dont have to worry about bones. they are in your grocer freezer.
