Beef Stroganoff Casserole
1lb. hamburger (or ground turkey works as well)
1 pkg. egg noodles or other noodle
1 can sliced mushrooms, drained
1/2 onion, minced
1/2 tsp. minced garlic (about 1 clove)
1 cube beef boullion
1/3 cup water
1 can cream of mushroom soup
1 1/2 tsp. Worcestershire sauce
1 cup sour cream
1 cup shredded swiss cheese

In boiling water, cook noodles according to directions. Brown hamburger, drain fat, add the boullion and water, adding onion and garlic to soften. Add soup to meat mixture, mix well as it warms and thins. Add mushrooms, cooked noodles, worcestershire sauce and sour cream. Mix well and pour into casserole dish. Top with swiss cheese and bake 30 minutes or until cheese is bubbly.


Meatloaf
1-2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.


CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.


Stuffed Green Peppers
2 lbs. Hamburger
1 onion, chopped
1 1/2 cups rice
2 eggs
4-6 medium sized green peppers
1 large can tomato juice

Combine hamburger, onion, rice and eggs in a large bowl. Remove tops and insides from the peppers. Stuff peppers with hamburger mixture. Place in baking dish and pour tomato juice over them. Bake at 350 degrees for 1 ½ hours.


Baked Mac-sagna
1 lb. Macaroni cooked and drained
2lbs. Hamburger, browned and drained
1 large container large curd cottage cheese
1 large can gr. Pepper and mushroom spaghetti sauce
1 cup each cheddar and mozzarella cheeses

In large bowl, mix macaroni, hamburger, cottage cheese, sauce, and 3/ 4’s of each of the cheeses. Pour into baking dish and top with the remaining cheese. Bake until cheese is golden and bubbly.


Hens in a Blanket
1 (9 ounce) package chicken breast tenders
1 (8 ounce) can refrigerated crescent rolls
Cheddar cheese slices

Preheat oven to 400 degrees F. Unroll crescent rolls; separate into triangles. Top each triangle with a chicken tender and slice of cheese. Roll up, starting at wide end. Bake on a cookie sheet for 10 to 12 minutes, or until golden brown. Variations: Use Swiss or pepper jack cheese, sautéed onions, peppers, etc.


Sweet and Sour Chicken
1 medium onion, sliced
1 medium carrot, peeled, sliced
1 medium celery stalk, sliced
1 lb. boneless skinless chicken thighs, cut into bite-size pieces
1/2 cup KRAFT CATALINA Dressing
1/2 cup soy sauce
1/2 cup firmly packed brown sugar
1 tsp. grated gingerroot
1 can (8 oz.) pineapple chunks, drained, juice reserved
1 medium green pepper, sliced
1 medium red pepper, sliced
4-1/2 cups hot cooked MINUTE White Rice

PLACE onions, carrots and celery in slow cooker; top with chicken. ADD dressing, soy sauce, brown sugar, gingerroot and pineapple juice. Cover with lid. COOK on LOW for 7 to 8 hours (or on HIGH for 3-1/2 to 4 hours), adding pineapple and peppers for the last 30 min. of the cooking time. Serve over rice.

* Cook Time 1 hr. 15 min.

1. Ingredients

1. 1/4 cup all-purpose flour
2. 1/2 cup grated Parmesan cheese
3. 2 teaspoons paprika
4. 1/2 teaspoon salt
5. 1/2 teaspoon black pepper
6. 1 egg, beaten
7. 2 tablespoons milk
8. 4 skinless, boneless chicken breast halves
9. 1/4 cup butter, melted

2. Cooking Directions

1. Preheat oven to 350 degrees F (175 degrees C). Coat a shallow baking dish with nonstick cooking spray.
2. Combine flour, parmesan, paprika, salt, and pepper in a bowl. In a separate bowl, whisk together the egg and milk. Dip the chicken in the egg, then dredge in the flour mixture. Place in the baking dish, and pour the melted butter evenly over the chicken.
3. Bake for about 1 hour and 15 minutes in the preheated oven, until the cheese has browned, and the chicken has cooked.

Yield: 4 servings (Serving size: 4 servings)

Well my dad made this dish when i was younger that happened to be mighty tasty and filling and cheap.

He would mash some potatoes up and then cook some hamburger meat and then add a little spag. sauce to the meat. He would put some of the potatoes on a plate then top it off with the sauce and hamburger ... give it a try, even my picky kids loved it.

A favorite of my moms was * macorni soup *. Cook a lb of hamburger with ( or w/o ) onions. When that is done, add a can of whole tomotoes and 2 1/2 cans of water. Let simmer for an hr or so, stirring occasionally. When you are ready, in a separate pot, boil a lb of elbow macorni. while that is cooking, add some peas to the hamburger, onions and whole tomoatoes and turn off. When the elbows are done add them to a bowl and take your soup mixture and add some of that to the bowl of elbows. When the soup and macorni are cooled down and ready to be put away, if there are any leftovers, lol, then you can add the macorni to the rest of the ingred.'s. If you add the macorni while hot the macorni will get mushy. ENJOY!!!

A nice creamy casserole with noodles I would spice it up with some garlic and Italian seasoning or Oregano and add another can of soup. INGREDIENTS 4 c. cooked noodles 2 lbs. ground beef 3 med. onions, chopped 1 can cream of mushroom soup ½ c. milk 1½ c. shredded cheese (cheddar or American) 2 tsp. salt ½ tsp. pepper 3 eggs, beaten PREPARATION Brown ground beef and onions. In a 3- quart casserole arrange 1/3 of noodles, then ½ of meat-onion mixture. Add soup, that has been diluted with milk, Repeat with another 1/3 noodles and remaining meat. Arrange the remaining noodles on top. Sprinkle with shredded cheese. Pour beaten eggs over cheese. Bake, uncovered, for 30-40 minutes at 350°. Top will be crisp.

CHICKEN: Shred some left over chicken, add some of that taco seasoning from the packet, a little water, and put it in the oven until hot and you have a great filling for tacos or quesedillas, or you can use it for chicken nachos...yum. OR if you have fresh chicken (boneless) try making a quick and easy chicken lasagna: just layer noodles, your favorite veggies and cheeses with some cream of mushroom or broccoli soup and heat through. Just think of the flavors you like, and go with it!
GROUND BEEF: There is nothing wrong with a tastey meatloaf!! Again, just make one with the basic requirements, then add what you like. Or try mixing ground beef with cream of mush soup, mushrooms, corn, and other veggies. Put in casserole dish and top with Marie Calender's Corn Bread mix. Bake until cornbread is done and serve with mashed potatoes. Totally a hobo dish, but tasty (especially with a drop or two of tabasco).

"North Beach Rice" - 6 to 8 servings

1 cup MJB Long Grain White Rice
1/2 lb. ground lean beef
1 tbsp. oil
1/2 cup chopped onion
1/2 tsp. salt
1 (15 1/2 oz.) can Italian-style tomato sauce
8 oz. Mozzarella cheese; thinly sliced
1/4 cup grated Parmesan cheese

Cook rice according to package directions. While rice cooks, brown beef in oil. Add onion and cook until transparent; stir in salt and tomato sauce. Set aside until rice is cooked. Spread 1/3 of the sauce in oiled 2-quart shallow baking dish. Top with half the rice, then half the cheeses. Repeat layers of sauce, rice and Mozzarella. Top with remaining sauce and Parmesan. Bake at 350* - 25 minutes, until mixture is thoroughly heated and cheese is melted.


"Baked Chicken Theresa" - 4 servings

2 broiling chickens; split in halves
Salt
Pepper
2 tbsp. butter or margarine
2 tbsp. oil
1 cup MJB Long Grain White Rice
1/2 cup chopped onion
1 cup sliced celery
1 1/2 cups chicken broth
1/2 cup white table wine (or omit wine, and increase broth to 2 cups)
1/2 tsp. salt
1 tsp. poultry seasoning

Sprinkle chickens with salt and pepper; brown slowly in butter and oil. Remove chicken from skillet; add rice and stir over low heat until lightly browned. Add onion and celery; continue cooking over low heat until onion is transparent. Add broth and wine, 1/2 tsp. salt and poultry seasoning; heat to boiling. Place chicken halves on top of rice; cover and bake at 350* - 20 minutes, until rice is tender and liquid is absorbed.

My mom makes enchilada pie. Same as usual but you layer it and bake it.
I have put chicken breast w/Italian dressing to marinate and baked it
Hamburger surprise if you want that email me and I will look in my ex's mom's things. She was 87 when she passed and I have her writings.

ground beef soup
- ground beef
- carrots
- celery
- cabbage
- potatoe (optional)
add salt to taste.
in a pot of water add all veggies and bring to a boil .
separate pan brown meat-drain and add to pot.
when celery and carrots are soft serve with lemon.
yummy!!!!!!!!!!!!!!
u could make white rice on the side if u want.

press hamburger in bottom of baking dish, sprinkle with one pkg, brown gravy mix , drain two cans mixed veggies, put on top of meat, sprinkle with another pkg of brown gravy mix bake at 375 covered, untill done,,, for a 9x13 pan double this, it is really good and one way to get kids to eat their veggies.no salt needed as the gravy mix contains enough
