I had rice with vegetables, tuna salad, crackers and fruit... but chili and corn bread sounds delicious!!

lemon baked chicken and rice
got the recipe online from a friend's site. i'll cut it and paste here:
Yummy, Easy Chicken and Rice with Carrots
Chicken:
3 chicken breast filets
salt and pepper to taste
2 tablespoons olive oil
¼ cup lemon juice
1 tablespoon dried oregano
2 garlic cloves, minced
2 tablespoons fresh parsley
2 large tomatoes, sliced
1. Preheat oven to 350.
2. Trim chicken breasts and apply salt and pepper to both sides.
3. In a small bowl, mix the olive oil, lemon juice, oregano and garlic.
4. Pour half the mixture into a baking dish. Place the chicken inside, then pour the other half the mixture on top.
5. Cover the chicken breasts with tomato slices. Top with parsley.
6. Cook uncovered for 30 minutes or until done.
Rice:
1 cup basmati rice
2 tablespoons olive oil
¼ cup pine nuts
1 teaspoon thyme
1 teaspoon rosemary
1 bay leaf
salt and pepper to taste
1 clove garlic, minced
½ large onion, minced
2 cups chicken broth
2 tablespoons fresh parsley
1 small tomato, chopped
1. Heat oil in a sauce pan. Stir in basmati rice, pine nuts, thyme, rosemary, bay leaf, salt and pepper. Cook on high until all the rice is coated with herbs- about two minutes.
2. Add garlic and onions. Stir on high until onions begin to change color- about two more minutes.
3. Add chicken broth, parsley and tomatoes. Let boil, then reduce heat. Cover pan and simmer until all rice is cooked, about 25 minutes.

Creamy tortellini soup, take a box of chicken broth...big one, then can of tomatoe soup condensed, chive and onion cream cheese...only half a tub, chives....fresh or dried, tablespoon of cornstarch liquify before putting in, use a whisk to make smooth, add tortellini cook till done sprinkle with parmesan cheese and season with fresh ground pepper and sea salt YUMMO!

We did breakfast for dinner tonight (kids love it) bacon and pancakes with real maple syrup.
My husband only tolerates it....but you can't knock it out of the park every night.
