I'm English and I've been working and living in New Zealand for just over 2 years. I also married a New Zealander. The marriage doesn't mean much in the eyes of Immigration, all you have to do is prove you are in a genuine and stable relationship for at least 12 months prior to your visa/residency application. Your marriage certificate can be used as partial proof of a genuine and stable relationship. You also need to prove things like public recognition of the relationship, an exclusive sexual relationship, shared financial responsibilities, joint ownership on large purchases (house, car etc), joint bank accounts. If he/she is on a visa sponsored by his/her fiance then she will need to prove this and she has to submit a letter from her fiance supporting her application. If she is on a visa sponsored by a company then all this is irrelevant. This is pretty much the case for residency applications too. It depends on who is sponsoring the application.

I had a friend several years back that was Canadian and got a 'fiance visa' to live with her partner in New Zealand before they were married. I believe her visa was good for 2-years without getting married officially, not sure what they had to do in terms of proof to get it other than he said this is my fiance.
