And why? (in other words I'm not interested in answers like "At 5:00 pm.")

Once the sun has set... I would say that's one informal distinction of evening.

I dont really know the reason behind it, but i think it's 5pm. Until 11:59am u say "Good Morning", that's the obvious one. U say "Good Afternoon" from noon to at least 4:00pm and "Good Night" At 5pm probably because that's when it starts 2 get dark most places.

You would say "Good Afternoon" after noon (12) of course, and you would say, "good evening" during after 6:00. During 4-6, you can say, "Good late afternoon." Actually, you don't hear people saying good evening that much...

From 6:00 pm on I would think-- because that is seen to be the time when "evening" begins. Of course if you lived in the Artic circle, it could get really confusing!

I would say 6 pm, since I always hear people say "5 in the afternoon," but never hear "6 in the afternoon."

I usually start saying good evening after 6 pm, because where I'm from we think of the evening being from 6 pm until midnight. Deciding by the daylight is not always useful, for example if you are close to the arctic, where it's pretty dark half the year and never gets dark the other half of the year, like where I'm from. :)

good afternoon goes from 12:00-4"69 and then evening is from 5:00-7:00 because in the afternoon the sun in like in the sky and in the evening the sun is starting to go down and it starts to get darker in the evenings

After 6:00 p.m., it is 'good evening.' Until then, it's 'good afternoon.' After dark, just say "Good night, all."

Informally, the evening is the period in which the daylight is decreasing, between the late afternoon and night; it extends from the latter portion of the daylight (before sunset) until dark (after sunset). Typically between 5 and 11 pm.
I think this definition is a little wide and would probably say the evening is between 6pm (or sunset) whichever is sooner and 10pm
