We just received a catalogue from an organization called "Heifer" This group asks for monetary donations to be sent. The group then buys animals for families in 3rd world countries. You can buy the whole animal or pay for a portion or share.
You can also check out gifts called "Fair Trade" Money that is earned from this group goes directly to the craftsman. Most of the crafts are wonderfully made.
If you look quickly at the sites, you may be able to make a selection and have the gift ready by your deadline.
Good luck.

I am not sure how this will help but will put it forward. In my own family one year there was much yammering over presents, their cost, how someone had better give them something as valuable as what they were going to get for them. The rule that year within our family was that no one would buy a present, but would make others something for christmas, something from the heart. The idea within the rule was that everyone would get a present that would say to the receiver that someone cared enough to research and make that gift for them. The tradition that we began and decided to keep in addition was that many of the ornaments on our tree was homemade. when someone visited, they were offered one of the homemade ornaments to add to their own tree, thus we added that small something to someone else's christmas. good luck in your quest. I hope this can help in some small way.

I'd go for a around the world theme, find a "ten thousand villages store" (specializes in hand made wares from around the world), or hit the "trendy artist area" of town and hit some shops, or area specific themed ingredient basket, ex. Saskatoon berry sauce, from Saskatoon:) you get the idea
good luck

i would think that if they had everything they wouldn't want anything in the material world so try being a friend to that person who knows that might be the best gift you ever gave them!!!!!!!....... and besides it probably won't cost you have as much as something materialish!!!!!!!!!
