Pomodoro Sauce

1/2 cup extra-virgin olive oil or less, as desired

1teaspoon chopped garlic

15grilled Roma tomatoes, coarsely chopped

1cup Pomi strained tomatoes (see note)

1bunch sweet basil (tie with kitchen string)

Salt and pepper to taste

Heat oil in medium nonstick pan. Add garlic and sauté until golden brown. Mix tomatoes and strained tomatoes and add to garlic. Heat to a boil. Reduce heat to a simmer, add the whole bunch of basil and simmer 15 minutes. Remove basil (it will turn brown when ready) and discard. Add salt and pepper. Use as directed.

Note: Pomi tomatoes come in cartons found with other tomato products or with imported gourmet foods in some supermarkets and specialty stores.

donne di domani marinara is better than spaghetti sauce but i don't know how to make it. Sorry!
