Quick Tortellini
Prep: 5 min, Cook: 10 min.
9 ounces fresh cheese tortellini
2 cups tomato sauce, hot
1/4 cup parsley, chopped
1/4 tsp. freshly ground black pepper
1/4 cup shredded Parmesan cheese
Cook tortellini in a large pan of boiling water 6-7 minutes, or until just cooked through. Drain well and toss with remaining ingredients.

Easy Chicken Parmigiana
4 boneless, skinless chicken breast halves
1/3 cup dry bread crumbs
1 egg, beaten
1 (12-ounce) jar marinara sauce
1/2 cup mozzarella cheese, shredded
1/4 cup freshly grated Parmesan cheese
Preheat oven to 350*F (175*C).
Flatten chicken breasts with kitchen mallet between to sheets of plastic. Dip chicken cutlets into egg beat, then bread crumbs. Place coated chicken in a lightly greased 9 x 13 x 2-inch baking dish and bake for 20 minutes.
Remove pan from oven and pour the marinara sauce over chicken. Sprinkle mozzarella and Parmesan cheeses on top and bake in oven for 15 minutes or until bubbly and cheese is melted and golden.
Makes 2 to 4 servings.

why dont you try this: southwestern chicken pasta salad
Fresh summer corn is sweet, tender, and juicy--cooked or raw. If your corn is a bit past its prime, boil it for two minutes.
1/2 pound uncooked penne rigate
2 cups shredded skinless, boneless Grilled Lemon-Herb Chicken (about 8 ounces)
1 cup fresh corn kernels
3/4 cup (3 ounces) shredded sharp cheddar cheese
1/2 cup sliced green onions
1/2 cup diced red bell pepper
1/2 cup chopped plum tomato (about 2 tomatoes)
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
1 tablespoon extravirgin olive oil
1 tablespoon chopped canned chipotle chiles in adobo sauce
1/2 teaspoon salt
Cook pasta according to package directions, omitting salt and fat. Drain and place in a large bowl. Add Grilled Lemon-Herb Chicken and next 5 ingredients (through tomato); toss well to combine.
Combine orange juice and remaining ingredients, stirring with a whisk. Drizzle over pasta mixture; toss gently to coat. Cover and chill.
Yield: 6 servings (serving size: 1 1/3 cups)

how about fried chicken tenders with macaroni and cheese and sweet peas or
meat loaf minis
mix beef or turkey grounded with pepper salt bread crumbs egg bbq sauce garlic and onion mix with hands and then make mini burgers in shapes of meat loafs press center of each and fill with white cheddar or regular cheddar then cover up with meat and a little drizzle of bbq sauce on top and on a sprayed greased pan and in oven for some time till cooked
serve with garlic mashed potatoes and steamed green beans or can of peas and carrots u can add grands buttermilk or regular biscuits or cresants if u want too

Why no make a chocolate cake...it can't kill you to have cake for dinner once in a while...plus everyone in your family will remember the day MOM made cake for dinner..."my mom's so cool!" is what they will be saying.

i LOVE Italian chicken-very easy too
-Marinade the chicken breast in Italian Dressing
-you can cook it in a crock pot or in the oven
-add whatever seasoning you like (I use McCormik's Seasonall)
-Bake/cook until chicken is done
-goes nicely w/ greenbeans and rice
