Don't feel weird eating them just because of their name. Deviled does refer to the spices in the recipe just as FraDeablo means hot sauce. It is just a term. However, now that you mention it. I am hungry too!

I believe that the process of mashing up the egg yolks can be called "deviling". I am making this conclusion from thinking of other products, like deviled ham, which has the similar "ground up" consistency as the filling in a deviled egg.

""Deviled" is in reference to the fiery spices (sometimes) added to make the egg stuffing. It's a word that goes back to the 18th century as a verb meaning to cook something with fiery hot spices or condiments. Contemporary versions of deviled eggs may include a wide range of seasonings and added foods, such as garlic, horseradish, cheese, chutney, capers, salsa, hot sauce, mushrooms, spinach, sour cream, caviar, smoked salmon, or other seafood. The "deviled" aspect may or may not be retained."

Biblically, God gave instructions in the Old Testament to not eat the blood or the fat of animals (Leviticus 3:17). An egg yolk contains 9 grams of fat, plus there's more added fat from the mayonnaise, and that makes for a pretty fat-filled dish, which goes directly against God's instruction. Further instructions on food consumption can be found in Leviticus 11. Sorry if you love bacon and shellfish! Now, Christ saved us if we've consumed by accident, but once we have the realization, we are supposed to turn from our ways and sin no more. Enjoy a steak, or have a roasted chicken. Eat salmon and egg whites!

Your first answer is pretty much correct - the term comes from the "fiery" spices that one mixes into the filling.
