Would baking powder be used to make the batter stay on the prawns ?

Tempura batter, you can buy it at the grocery store in a box! It's really light and that's what is used in Chinese restaurant's!

Do you mean velvet prawns - in which case use cornflour - or deep fried crispy prawns in which case just use plain flour to make batter. Baking powder won't make anything stick - it might make batter bubble. Toss prawns in flour before dipping in batter to make the batter stick.

use self raising flour mixed with baking powder and water and salt, this will make a tempura style batter perfect for frying prawns as it takes no time at all to cook it, just like your prawns

There is a rice flour that makes a really light batter;
for a wonderful batter though use a soft cake flour and mix in beer until you get a batter consistency..the beer makes it nice and light!!

use self raising with water and no you dont need baking powder
this is a recipie for basic batter:
4 ounces of self raising flour
a quarter of teaspoon of salt(or what you like taste wise for salt)
same black pepper
5 fluid ounces of water
you should coat it first in the extra self raising flour then in to the batter, we use a wok full of oil on a cooker top to get a decent amount of heat and cook for a few mins
if you want more batter then double flour and water and you can always add more flour if you want it a bit thicker
