INGREDIENTS
6 hard-cooked eggs
2 tablespoons mayonnaise

DIRECTIONS
Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, sugar, vinegar, mustard and salt; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.

Things You'll Need

Instructions

STEP 1: Halve hard-cooked eggs lengthwise (see "How to Boil an Egg," under Related eHows) and remove the yolks.
STEP 2: Place yolks in a bowl and mash with a fork.
STEP 3: Add mayonnaise, mustard and vinegar. Mix well.
STEP 4: Season with salt and pepper.
STEP 5: Stuff egg white halves with yolk mixture, dividing yolk mixture evenly among the eggs.
STEP 6: Garnish with paprika or parsley.
Tips & Warnings

If you have a pastry bag you can use it to pipe the yolk mixture into the egg halves; you can also use a zippered storage bag. Simply fill the bag with the yolk mixture, snip a small piece off one of the bag's bottom corners and squeeze the filling through the bag into the egg halves.
Deviled eggs can be quite individual. Include more mustard or a couple of shots of Tabasco for more kick. You can also add chopped sweet pickles or cornichons.
Lighten this dish up by using either fat-free mayonnaise or reduced-fat mayonnaise.

Two important things to add. Never boil the eggs over 10 minutes. The yolks will turn a greenish color and won't look as pretty. Second always start with cold water when boiling the eggs. The eggs should be at the same temperature as the water otherwise you will have breakage. The pastery bag is an excellent way to reinsert the yolk. It makes a fabulous presentation for you and your guests.

Cover eggs in cold water & bring to a boil. Boil 10 minutes, drain & run cold water over eggs till they are completely cooled down. Peel by "gently" rolling eggs on counter top breaking the shell all over the egg. Dip the egg under water as you peel it. Dry with paper towel.

Cut in half; pull out yolks; mash yolks in a bowl (I use a hand mixer-It's easier than mashing them with a fork) Add mayonaise a little at a time (don't want filling too runny); a little mustard & pickle relish a little at a time (relish has juice in it & like the mayo you don't want your filling runny) till you have the consistency you want. Taste it as you go till you get it the way you like it. With a teaspoon just drop yolk mixture into the white halves. Sprinkle paprika on top if you like or not. Up to you as it doesn't make that much difference in the taste, it's for looks.

People normally mess up deviled eggs with too many ingredients. Simple is better & just as good.

The best way to boil the eggs-

Put the eggs in cold water add a splash of vinegar and salt turn on medium heat wait until they boil and then take them off the heat and cover. Let them set for exactly 10 minutes. Then put them in an ice water bath to cool for a few minutes. Then peel. Older eggs will peel more easily than fresh ones.

I just use mustard, dill weed and mayo with the yolks. salt and pepper of course

Place eggs in pot, cover with water. Bring to a boil, turn off heat and let them sit at least 17 minutes, covered. When cool, peel and slice eggs in half lengthwise. Gently scrape out yolk into small mixing bowl. Mash yolk and add mayonnaise, mustard (prepared or ground), dill relish, capers, jalapenos, whatever you like. Mixture should not be real runny. Take spoonfuls of yolk mixture and put into boiled whites, arranging on plate or platter as you go. When complete, sprinkle with salt, pepper, and paprika for color. Cover and chill for a while so everything "sets". Bon apetit!

The basic is JUST mashed egg yolk and mayonnaise, stuffed back into the eggs, garnished with a bit of paprika powder. Nothing more. But usually one adds other things as one likes.

Our favorite recipe includes some dry mustard, black pepper, garlic powder, celery salt and tiny chunks of chopped fresh celery, occasionally with a bit of curry powder and/or tiny pieces of chopped fresh or sundried tomatoe as well, very occasionally also spiced up with a tiny amount of bits of chopped jalepeno.

"Herbed Deviled Eggs" - 1 dozen

Someone beat me to it. Mine is the yolks of hard boiled eggs, lite mayo, ballpark mustard, dill relish, and a splash of white vinegar. The vinegar is the secret ingredient.

one of my favorites for thanksgiving (the whole family too) boil eggs 20 mins (rolling boil) let stand 5 mins rinse with cold water until eggs have cooled.....shell eggs cut in half popping yolk out in bowl mash yolks with fork till crumbly add mayo (depending on amount of yolks add tbl spoon at a time till nice and creamy (like frosting) put in tbl spoon of dill pickle juice salt and pepper and teaspoon of yellow mustard.....most all to your taste really adjust to your likings.....mix well and place back into egg half (can use pastry bag or zip lock bag with corner cut off to make it fancy) sprinkle with paprika. good luck and happy munching
