i LOVE sweet potatoes, and wish i could find something to eat with it. or which has sweet potato in it and still gives the same great flavour. xXx

mmmm....roasted southwestern sweet potato soup

for this you will need
4-5 medium sized sweet potatoes peeled and diced
2 large carrots peeled and diced
one large onion diced
4-5 ribs of celery washed and diced
3.5 litres(approx.14 cups) chicken stock(vegetable stock works okay too)
250 mL 35% cream
3-4 cloves of garlic
1/2 bunch fresh cilantro (washed and gently dried)
1/2 bunch fresh oregano
1/4 can chipotle peppers in adoboe sauce chopped(I think it is a 250mL can)
2 teaspoons ground cumin
2 teaspoons ground corriander
1.5 teaspoons ground cinnamon
1.5 teaspoons fresh gratted nutmeg
2-3 teaspoons chilli powder(depends how hot you wanty it)
salt and pepper
olive oil
Tabasco or your favourite hot sauce
juice and zest from three fresh limes(you can use the stuff from the little plastic lime.......but well you know....)

1. roast sweet potatoes,carrots,celeryand garlic together with a little olive oil,salt,pepper and a little of the dried spices,until all are a dark brown colour and well caramelized(450F for about 45 min. to one hour)

2.in a medium sized thick bottom pot heat some olive oil and "burn" the dried spices until they give off a fairly pungent aroma(this DOES NOT take long)they will smoke some so open your windows and turn on the vent hood(try not to breath in the smoke).

3.add roasted veggies to the pot and cover with chicken stock stirring well to get the spices floating around. let it simmer for about 45min.-1 hour or until reduced by a little less than a third.

4.durring the last 10min. or so of the simmering add your chopped chippotles,the accompanying adoboe sauce and half of the herbs(you can just roughly chop the cilantro down to the root ends but the oregano should be picked off the stems)

5.puree the soup in a food proscesor or using an imersion blender(Braun Hand Blender or something simmilar) a regular blender works okay if you are careful not to leave the top on when the soup is hot.

6.return soup to the pot and add cream the rest of the fresh herbs the lime juice and zest. season with salt and pepper and hot sauce to taste.warm the soup through(it looses a little heat in the pureeing and i like really hot soup).

7.ladel into bowls or large coffee mugs,sprinkle a little fresh herb and some fresh grated cinnamon and nutmeg.you can also swirl in a little sour cream at tthe end.

serve with fresh warm bread and cold beer perfect on a winter night.or a hot summer night

"Praline Sweet Potatoes" - 2 servings

1 cup mashed sweet potatoes
2 tbsp. milk
1 egg yolk
1/4 tsp. salt
Dash pepper
1/4 cup packed brown sugar
2 tbsp. butter; melted
2 tbsp. corn syrup
2 tbsp. chopped pecans

In a small mixing bowl, combine the sweet potatoes, milk, egg yolk, salt and pepper. Transfer to a greased shallow 2-cup baking dish.
In a small microwave-safe bowl, combine the brown sugar, butter and corn syrup until blended; cover and microwave on HIGH for 1 minute or until sugar is dissolved. Spoon over sweet potatoes. Sprinkle with pecans.
Bake, uncovered, at 350* for 20-22 minutes or until a knife comes out clean.

Try having it with a sunday roast dinner.
A joint of beef topped with rosemary and thyme.
Roast potatoes topped with honey for a nice glaze and crispy outer shell. roast carrots and onions in with potatoes for the last 10-15 minutes of cooking.
Steamed vegetables (whichever you prefer, carrots, swede, cabbage etc...)
Yorkshire puddings.
Stuffing balls.
Homemade gravy using just boiling water, lea and perrins, vinegar, oxo cubes, gravy granules and the secret ingredient. (not gonna tell you what it is otherwise it won't be a secret.) Also add some of the steamed veg and a few diced pieces of the beef.
Topped of nicely with Sweet potatoe and a nice glass of Ernest and Julio Gallo white wine.

MMMM can't wait till sunday.

This is my favorite way to eat them. dinner/dessert in one. mmm. mmm.

My southern mamas sweet tater casserole

3 cups mashed sweet potatoes (canned)
1 cup sugar
1/2 tsp. salt
2 eggs
1/3 stick butter
1 tsp. vanilla

Topping:
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup melted butter

Preheat oven to 350. Mix potatoes, sugar, salt, eggs, 1/3 stick butter and vanilla in a large bowl with an electric mixer. Pour into a casserole dish. In a separate bowl, mix topping ingredients well and sprinkle over top of casserole. Bake for about 35 minutes.

Pork, orange and sweet potato stew - great for the winter.

chop up pork, onions, sweet pots, carrots and swede into similar size chunks.
fry pork and onions until golden brown, then add 1 pint orange juice, add veg and bring to the boil.
add 1 dessertspoon of ground cumin and simmer gently for 30 - 45 minutes. if required add cornflower to thicken.
serve with crusty bread.

mash the sweet potatoe with loads of butter,cream salt and pepper. it goes well with most things like a good meaty pork chop

If you like spicy ... I like cajun-flavored pork chops with my sweet potatoes. A steak always goes well, too, for a hearty fall flavor.
