Try getting yourself a pressure cooker. It is fast, fun and safe to use and it tenderizes the toughest cuts of meat. You can also buy Adolph's Meat Tenderizer in the store. It is a natural enzyme product obtained from papayas and has been around for years and works great as well.

You are overcooking it. The trichinosis scare that made us all cook pork well done has been over for decades. Plus pork is a very lean meat so will dry out quickly so it's important not to overcook.
Here is a quick recipe that I can remember off the top of my head that gives great results everytime -- plus it's super easy:
Quick/Easy Pork Chops
pork chops
ketchup
brown sugar
lemon slices
onion slices
This is a recipe that'll drive some folks nuts: there are absolutely NO measurements. I've made it a number of times and, regardless of the quantity of ingredients I've used, it always come out great.
This is the nicest recipe, you can make any amount, it's extremely easy and delicious too! :-)
Preheat oven to 350º F. In casserole or pan, place pork chops. Top each with 1 tablespoon ketchup, 1 tablespoon brown sugar, 1 slice onion, and 1 slice lemon. Bake for 45 minutes to 1 hour, depending on thickness of the pork chops. (Mine are usually always done in 45 mins.)

buy meat tenderizer, don't get the seasoned kind, if you do, be careful how much you use, its easy to get it too salty... Just put the tenderizer on the meat about an hour before you cook, and let it set... also if you are cooking chops, cover them with a lid and cook on a little lower heat than normal, when you cover it, it helps to be more tender. this works on most meats...

Layer pork chops and sauerkraut (starting and ending with sauerkraut) in your casserole dish. Pour in 1 cup water, then sprinkle with brown sugar. Cover; bake at 350* for 1 hour.

If it is tough and dry you are probably cooking it too long. 1 inch boneless chops shouldn't take more than 15 minutes.

You are probably over-cooking it, or you are buying pork that's too lean. Cook it faster (ie higher temperature for less time), and don't cook it so much. Pork no longer needs to be "well-done" to be safe...
