Here's a couple of my light lunch recipes :)

Chicken Bruschetta

1 tsp. KRAFT Mayo Real Mayonnaise
1 tsp. pesto
3 slices whole wheat bread, toasted
1 cup packed fresh baby spinach leaves (about 24 leaves)
1 pkg. (6 oz.) OSCAR MAYER Italian Style Chicken Breast Strips
1/3 cup roasted red peppers, drained, chopped

MIX mayo and pesto; spread onto toast slices.
TOP evenly with the spinach, chicken and peppers.

Turkey and Tomato Tortilla stacker

4 TACO BELL HOME ORIGINALS Flour Tortillas
2 Tbsp. KRAFT Mayo Real Mayonnaise
6 slices OSCAR MAYER Thin Sliced Honey Smoked Turkey Breast
2 KRAFT Singles
2 lettuce leaves
6 plum tomato slices
3 slices OSCAR MAYER Ready to Serve Bacon, warmed

SPREAD tortillas evenly with mayo.
TOP 1 of the tortillas with 3 turkey slices; cover with Singles, second tortilla, lettuce and bacon.
TOP with a third tortilla, remaining 3 turkey slices and the tomato slices. Cover with remaining tortilla, mayo side down. Cover and refrigerate until ready to serve. Cut into 6 wedges to serve.

Bacon, Corn, Salsa Chicken Roll Up

4 slices OSCAR MAYER Center Cut Bacon, cut into 1/2-inch pieces
1/4 cup finely chopped green onions
1/4 cup finely chopped red peppers
1/2 cup gold and white frozen corn
4 whole wheat tortillas (6 inch)
1/4 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Mild Salsa
1 pkg. (6 oz.) OSCAR MAYER Southwestern Seasoned Chicken Breast Strips, heated as directed on package
1/4 cup KRAFT 2% Milk Shredded Reduced Fat Colby & Monterey Jack Cheese

COOK bacon in medium skillet on medium heat 10 min. or until crisp. Drain, reserving 1 tsp. of the drippings in skillet. Set bacon aside.
ADD onions and peppers to drippings in skillet. Cook 5 min. or until vegetables are crisp-tender, stirring frequently. Add corn; cook 1 min. or just until heated through, stirring occasionally. Stir in bacon.
SPREAD each tortilla with 1 Tbsp. salsa; top evenly with the chicken, bacon mixture and cheese. Roll up.

Fruit and Nut Wrap

2 Tbsp. PHILADELPHIA Strawberry Cream Cheese Spread
2 Tbsp. raisins
1 flour tortilla (8 inch)
2 Tbsp. PLANTERS Unsalted COCKTAIL Peanuts
1/4 cup sliced strawberries

MIX cream cheese spread and raisins until well blended. Spread evenly onto tortilla to within 1/2 inch of edge. Sprinkle with peanuts.
PLACE strawberry slices down center of tortilla; roll up tightly.
SERVE immediately. Or, wrap tightly with plastic wrap and refrigerate until ready to serve.

Poppyseed Fruit Salad

1/3 cup KRAFT Creamy Poppyseed Dressing
1/3 cup strawberry low-fat yogurt
2 cups halved strawberries
2 cups seedless green grapes
2 medium kiwi, peeled, sliced
1 small cantaloupe, sliced
1 small honeydew melon, sliced
1 medium star fruit, sliced

MIX dressing and yogurt until well blended.
ARRANGE fruit decoratively on platter.
SERVE with the dressing mixture.

My lunches have been soup and crackers lately. I tend to bring leftovers a lot too, even if it's just a little bit of veggies left from the night before with a sandwhich, it's good. I love pita salads. Get some pocket pita bread (I prefer whole wheat), lettuce, cheese, green pepper, load the bread and add your favorite dressing. It's WONDERFUL and will fill you up.

Ritz crackers are good. Try the whole wheat ones and put some toppings on them, like salsa, peanut butter, etc. Or maybe a wrap or pita. Just put some salad or whatever in it.

How about a chicken or turkey wrap.
Buy some large tortillas and they come flavored.
Get some chicken or turkey.
Add some veggies like bean sprouts, greens, tomatoes
Add some Ranch or whatever salad dressing
Roll it up and you have your wrap.

"Hidden Valley Chopstick Chicken Salad" - 4-6 servings

1 1 oz.) packet Hidden Valley Original Ranch Dressing Mix
1 cup milk
1 cup mayonnaise
2 tbsp. soy sauce
8 cups torn lettuce
2 cups shredded cooked chicken
1 cup chopped green onions (scallions)

In bowl, combine dressing mix with milk and mayonnaise; mix well. Cover and refrigerate; chill 30 minutes to thicken. Stir in soy sauce and toss with remaining ingredients.


"Burrito Wraps" - 4-6 servings

1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
2 cups shredded cooked chicken
1 cup sour cream
1/2 cup salsa
4-6 (10") flour tortillas
Optional Fillings: black beans, lettuce, cabbage, red pepper strips, cheese

Combine dressing mix, chicken, sour cream and salsa in saucepan; heat thoroughly. Fill tortillas with chicken mixture and desired fillings.


"15-Minute Asian Noodle Soup" - 4 servings

4 cups chicken broth
1 1/2 tsp. soy sauce
1 tsp. grated fresh ginger
1/2 to 1 tsp. Asian chile sauce or bottled hot pepper sauce
1 (3 oz.) pkg. Ramen noodles (any flavor); broken
1/2 lb. medium peeled, deveined shrimp
1/4 tsp. toasted sesame oil (optional)
Toppings such as bean sprouts, lime wedges, sliced red chile peppers, and cilantro (parsley) leaves

In a large saucepan, combine broth, soy sauce, ginger and chile sauce; bring to boiling. Add ramen noodles and shrimp; return to boiling. Reduce heat; simmer, uncovered, 3 minutes, stirring occasionally, or until noodles are tender and shrimp turn opaque. Remove from heat; add sesame oil. Season to taste with salt and pepper. Serve soup with desired toppings.
(Note: For raw bean sprouts, add to broth mixture and boil. Or use cooked sprouts.)
