I'm marrying a Canadian and we plan to live in Canada. The process for immigration seems way long and involved.

I can't speak for an American marrying a Canadian but I am Canadian and my Brother married a girl from another country and had to go through that process. Yes it seems long but if you are married and living here it won't really be that long. I'm sure you'll have no problems passing any scrutiny. I hope you are planning on living in an area where you are familiar with the climate. It would not be good for your morale to move to northern Ontario or Edmonton if you are from a southern state. Just be forwarned and prepared for the climate in your new home area. Oh and welcome eh! (tee hee we don't really say that - just when we speak to Americans!)
