i like to eat them to snack on since there healthy (especially the seedless ones) what other seasonings beside dressings (i like italian) can i put on them?

there is a dressing called three cheese blend that would be great and also a salsa blend new on the market that would be great with cukes.

Cucumbers with Yogurt-Dill Sauce

1 cup plain yogurt
2 tablespoons mayonnaise or salad dressing
2 teaspoons lemon juice
1 teaspoon chopped fresh dill weed or 1/4 teaspoon dried dill weed
Salt and pepper to taste
1 garlic clove, finely chopped
2 large cucumbers, thinly sliced, (3 cups)
1/4 cup thinly sliced red onion


1. Mix all ingredients except cucumbers and onion in large bowl. Stir in cucumbers and onion.
2. Cover and refrigerate 30 minutes to blend flavors.



Cold Cucumber Soup

2 large cucumbers
1/2 cup chopped green onion
1/2 teaspoon salt
1 teaspoon dried dill weed
1 container (16 ounces) plain yogurt


1. Peel cucumbers; cut lengthwise in half and remove seeds. Cut into pieces.
2. Place cucumbers and remaining ingredients in blender or food processor. Cover and blend on high speed until well blended. Refrigerate 1 hour or until chilled.
3. Garnish soup with fresh dill weed or radish slices if desired.



Cucumber-Dill Salad

1 seedless European cucumber, or 2 American cucumbers
3 tablespoons cider or white vinegar
1 tablespoon sugar
salt and freshly ground black pepper
1 small red onion, sliced and broken into rings
3 tablespoons finely chopped fresh dill

Wash the cucumber(s) and partially remove the peel in lengthwise strips using a vegetable peeler or fork and leaving a little skin between each strip. Thinly slice the cucumber widthwise. Place the vinegar, sugar, salt, and pepper in a bowl and whisk until the sugar is dissolved. Add the cucumber, onion, and dill, and toss well. The salad can be served at once, but it will improve in flavor if you let the ingredients marinate for 5 minutes.

Cucumbers with Fresh Dill! This used to be a hands-down favorite when I used to ranch cook...

1-2 med. cucumbers, peeled and sliced thin
1/4 c. light (or fat-free) sour cream
1 T. lemon juice
2 T. dill weed (fresh is super, but the stuff in a jar is fine too)
1/2 t. salt
dash of pepper
1/2 t. sugar

Mix it all together and chow down!!! Also, if you like onions, they're excellent in here.

Cut the cucumbers thin and put in a bowl, cut an onion thin and add it to the bowl. Now salt them very well. More than you usually would. Let stand for an hour and cover with vinegar. Really Good

Cucumber Sandwiches Recipe

Ingredients:
1 oz. cream cheese, softened
1 Tbs. sour cream
1 1/2 tsps. chopped chives
Salt and pepper to taste
4 slices white or mild wheat bread
1/4 large cucumber, peeled and sliced thin
Chive for garnish

Directions:
To assemble each sandwich: Mix together first 4 ingredients and spread evenly on 2 slices of bread, saving about a teaspoon of the spread for garnish.Top with cucumbers, and remaining 2 slices of bread. Using a sharp knife, cut the crusts off the edges. Cut sandwiches into 2 triangles or rectangles. To garnish, place a dab of remaining spread on top of each triangle or rectangle and add a bit of chives.

Makes 4 sandwiches For Watercress sandwiches, substitute 10 to 12 sprigs watercress for the cucumber, and cilantro for the chives. For Salmon sandwiches, substitute 2 oz. sliced smoked salmon for the cucumber, and dill for the chives. For Ham sandwiches, substitute 2 oz. thinly sliced ham for the cucumber, and fresh tarragon for the chives. Proceed as for the Cucumber Sandwiches.

One of my summer time favorites or when cukes are in season, is a cucumber sandwich! I like a toasted whole wheat or 6 grain and add a little mayo, s&p yummy!! Also good on it is one of the flavored humises in the deli dept of your supermarket. We also slice up a bowl of cukes and add cider vinergar with s&p if desired as a side dish with any meal.

hear are a few ideas
Cucumber Salad


4 cucumbers, peeled
1 teaspoon salt
1 teaspoon sugar
1 tablespoon rice wine vinegar
1 clove garlic, minced
4 tablespoons soy sauce
1 tablespoon sesame oil
Few drops Tabasco sauce

Slice cucumbers lengthwise. Sprinkle salt on cut sides, then place cut-side down on paper towels to drain. After 30 minutes, pat dry.
Slice cucumbers into 1/2 inch pieces. Place in a large bowl. In a small bowl, combine the remaining ingredients. Sprinkle on cucumbers and toss to coat. Let sit for 1 hour before serving.


Cold Cucumber soup
Ingredients:
1 large English cucumber, peeled and sliced
2 cups plain yogurt
2 cups peach yogurt
2 cups chicken stock, chilled
2 tbsp. minced green onions
3 tbsp. minced fresh mint
salt and freshly ground peper to taste
fresh mint leaves for garnish


Directions:
Whirl all of the ingredients together in a blender or food processor in batches until pureed. Stir together in a large bowl. Cover with plastic wrap and refrigerate until ready to serve, at least 3-4 hours.

This soup may be made 24 hours in advance and refrigerated. Garnish with fresh mint leaves. Makes 10-12 servings.
For the dill, lemon recipe, use 4 cups plain yogurt, 1 tbsp. lemon juice and 3 tbsp. of dill; but do try this one also, it is wonderful.

must -o- khiar (yogurt & cucumber dip)
Ingredients:
1/2 pound yogurt
2 pcs. pickiling cucumber
2 tsp. dried mint leaves ( crushed )
salt and pepper - as needed to your taste

Directions:
Pour yogurt, dried mint , salt and pepper in a big bowl and mix. Then skin off the cucumber and cut in small (1/8 inch ) squares , and mix in with the yogurt .

Other versions : you can mix walnut and raisin ( golden).





Cucumber, Fennel, And Orange Salad With Pomegranate Seeds - pareve

Serves 8

2 hothouse cucumbers, peeled and thinly sliced
1 large fennel bulb, trimmed and thinly sliced
1 small red onion, halved and thinly sliced
2 large naval oranges, zest and pith removed, halved and thinly sliced
2 bunches watercress or 8 ounces young spinach leaves
3 tablespoons sherry vinegar
2 tablespoons fresh orange juice
1 tablespoon honey
1/2 cup olive oil
1 cup pomegranate seeds
1/2 cup toasted pine nuts



Directions:
Combine cucumbers, fennel, onion, oranges and watercress in large shallow bowl. Whisk together vinegar, orange juice, honey and olive oil.
Toss with salad.

Sprinkle with pomegranate seeds and pine nuts.

I like to chop up cucs with tomatoes and bacon crumbles and ranch dressing. Greek seasoning sprinkled on top of cucs are good too.

It's a hispanic recipe and i actually liked it when i tried it

cucumbers peeled and sliced
valienta hot sauce (from the hispanic section in supermarket)
fresh squeezed lime juice
salt to taste


It's really good and spicy if you like spicy

They are also really good sliced with some white vinegar, oil, chopped tomatoes, chopped green onions, s & p, and a little sugar/Splenda for a little sweetness.
