CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

The Central Market in my neighborhood has a quote painted on one of the walls: "Poultry is for the cook what canvas is for the painter." I forget who said it, but s/he is so friggin' right.

When I was a supremely lazy cook, my favorite thing to do was preheat the oven to 375, take some boneless skinless chicken breasts, find stuff in the house with which to smother them, then bake them for an hour. Stuff I have used in the past:

- Salsa, shredded cheddar, and crushed tortilla chips (great use for the dregs of a bag!)
- Bacon, sliced mushrooms, and Swiss cheese
- Cream of mushroom soup and shredded cheese

Another thing you can do with chicken breasts is to cut a pocket into them and stuff the pocket with yummy stuff. This, too, can be pulled from stuff you already have in the house - you could even use "real stuffing" if you wanted, though it may be hard to make a small enough quantity of stuffing. My favorite pocket filling is ricotta, garlic, pine nuts, and (thawed frozen) spinach, though I've done cottage cheese and spinach before in a pinch too.

And when I mean "cut a pocket", I seriously mean make it look like you've turned the chicken breast into a small purse or something. Use a gentle sawing motion, try to keep your cut horizontal, and try not to poke the tip of the knife through the other side - keep about a 1/2" margin of intact chicken on all three sides. If I could draw you a picture over Y!A, I would. =) This step is a little easier if the chicken is partially frozen, but I have really bad luck at catching the chicken when it's only *partially* frozen, so I just take my chances with fully thawed breasts.

My famous Mufulatta!

Roasted Red peppers
pickles
red onion slices really , really thin
sun dried tomatoes in oil chopped fine
whole Basil leaves
mozzarella in water, sliced
cappricola
sopprosata
mortdella
salami
ham
turkey lettuce, tomatoes
a large, round, Tuscan style loaf of good crunchy/soft bread.

a mixture of Balsamic vinegar, olive oil, onion powder, garlic powder Italian seasoning mix (dry herbs) and salt and pepper.

You can add Mayo if you like but obviously you don't, so just use the dressing... Soak it into the bread.

assemble everything in layers Game meats on top separated by the cheese regular cold cuts on the bottom and veg in layers all through out.

Cover it in Plastic wrap and put in the fridge for about 1/2 hour before serving. Cut it like a cake or pie with a serrated knife.

It is THE BEST Sandwich you'll ever eat!

Sweet & Tangy Pork Chops
6-8 boneless pork chops
1/2 cup catsup
salt and pepper
2 Tbsp. cider vinegar
1 green pepper cut into strips
1 Tbsp. lemon juice
1 medium onion, chopped
1/4 cup brown sugar
1 can (14 1/2 oz) stewed tomatoes
2 Tbsp. Worcestershire sauce

Place pork chops in baking dish with salt and pepper. Add green pepper, onion & tomatoes. Combine ketchup, lemon juice, brown sugar & Worcestershire sauce. Pour over vegetables and meat, cover with foil and cook 45 minutes at 325 degrees. Very good over rice, noodles or mashed potatoes.

mmmm i am buying these tortilla wrapps.

you can fill them with any thing. when i have no time to cook, i just put some cheese and veggies, close it in the sandwitch toaster and in 5 min it will be ready.

you can put anythign you want.

when i have more time, and have loads of stuff, i do something of the sort:

carrot ribbons and zuccini ribbons with some butter and herbs as a side

fill the tortilla with cheese, mushrooms, tomatoes, onions, lightly fried cabbage and maybe spinach if you like, close it and there you are, you have a nice snack or a meal....

My mom always made this:

Brown hamburger( or your favorite ground meat)with onions and seasonings ( salt and pepper)
drain put back in skillet
add:
drained( partially or all the way) pork and beans
brown sugar to taste
ketchup
BBQ sauce
little mustard
Simmer until warmed through and desired consistency

You can really make this your own by using different amounts of ingredients or substituting them for your favorites.
Mom called it Poor Man Slop but I don't -it just doesn't sound all that appetizing. It is very good,though-my kids and my husband love it.

Chicken stir fry (one of my faves)
You will need:
Chicken tenders
Bag of fresh stir fry veggie mix (broccoli, snow peas, carrots)
Some sort of sauce from the asian aisle

Cut the chicken tenders into chunks. Cook in a wok or skillet with an Asian sauce (I prefer terriyaki). When the chicken is cooked, add the veggies and a little more sauce and cook till the veggies are tender.

Shepards Pie- the quick way
in a lasagna pan
bottom layer seasoned ground beef
middle layer- 2-3 of cans corn
top layer- instant mashed potatoes
sprinkle cheddar cheese on top
bake at 375 until cheese in melted on top.
may sound cheap (probably because it is) However my family likes it.. and it's quick

ramen noodles
cook the noodles (submerged as best as possible in water in a microwave safe bowl (preferably the bowl you're going to eat them out of) of course) for 3 minutes in the microwave, give them 2 minutes to soak up some more of the water, drain them, put in the powder, mix, and enjoy

take some chicken sprinkle on some fajita spices then cook in the oven and then place into a pitta bread with some salad try that its better with mayonnaise
