Just started cooking more, enjoying it more, and using fresh herbs. Still learning what goes with what!! Thanks for your help!!

Not a silly question-esp since you are steeping up your cooking skills - good for you! You could add: Cilantro with green peppers (hot or mild as you prefer), parsley with garlic, basil or oregano with sundried tomato, Rosemary, sage and tyme with onion (very french). It is a mix and match kind of thing. You add herbs and roots/fruits/veggies to balance each other and enhance a otherwise simple dish. My kids love Broccoli cheese soup with tarragon added bonus is they get more variety when I step up a simple favorite. Good Luck!

Y'know, since the reason you're asking is so you can figure out what goes with what, I'm going to offer you some generic advice:

Because taste and smell are very strongly linked, one of the things you can do is take a small bite of the food you're cooking, then take a sniff of the herb you'd like to add. If it smells good with the food in your mouth, then the herb will probably taste good in the food.

And this is going to sound weird, but some people can develop a "smell memory" where they can be tasting the food and *thinking* of an herb or spice and determine if it would be good. Sometimes you'll hear folks sitting down to dinner in a restaurant and saying "this would be even better if it had some basil in it"? That's what they're doing.

As for a specific recommendation for potato cheese soup: this may also sound weird, but I'm thinking of potato cheese soup and fresh dill. Not a whole lot, mind you - dill has a nasty habit of taking over flavour-wise - but I think it'd work nicely, especially if the cheese is cheddar. And don't forget the freshly chopped chives on top!

Thyme would be really good, also some parsley.

And add a little fresh grated nutmeg, too (not pre-ground, buy whole and use a microplane or the fine side of a box grater) . Nutmeg is awesome with cheese and cream sauces.

Definately fresh dill. If you want to add to the soup you could try corn too and chunks of ham.

I'm actually shocked that no one else has mentioned that!

Crumbled bacon on top as well would give the soup that "baked potato" flavor which is fabulous in a potato soup!

It is not a silly question......Try the herb Dill , it gives a very fresh savoury taste to the potatoes & cheese...... I am a beauty consultant who loves to cook:

I think rosemary would be way too overwhelming, thyme might taste okay, basil?- I don't know about basil w/potatoes. Try chives- a nice subtle onion-y flavor without being overwhelming would be a nice addition.
