Macaroni and Cheese
This is quite quick to make and it tastes great!
8 oz. elbow macaroni
3 cups milk
2 Tbs. cornstarch
2 oz. Neufchatel cream cheese (1/3 less fat), cut into small pieces at room temperature
3/4 tsp. salt
1/2 tsp. pepper
1 cup shredded cheddar cheese
1/2 cup grated Romano or parmesan
½ cup coarse bread crumbs
Heat oven to 375. Cook macaroni until al dente and drain. In the same pot, whisk ½ cup milk and cornstarch until smooth. Heat remaining milk until very hot. Add to pot and stir over medium heat until it simmers. Simmer, stirring constantly for 1 minute or until slightly thickened. Remove from heat. Add cream cheese, salt and pepper and whisk until cheese melts and is smooth. Grease 2 quart baking dish. Mix ¼ cup cheddar, 2 Tbs. Romano or parmesan, and bread crumbs in a separate bowl. Pour macaroni back in to pot and add remaining cheeses and mix until well blended. Pour into baking dish. Sprinkle with bread crumb mixture. Bake for 20-25 minutes until brown and bubbly.

1 box of elbow macaroni cooked and drained, don't cook it all the way done or it will be mushy after its baked.
1 stick of sharp cheddar cheese grated
2 eggs
1 1/2 cups of milk
1/2 stick of butter
salt and pepper
After you have cooked your macaroni place 1/2 of it in a casserole dish that has been sprayed with cooking spray of greased with butter
Mix together your milk and eggs pour 1/2 of the mixture on top of the macaroni and top with 1/2 of the grated cheese. Top with another layer of macaroni, milk and eggs and the remaining cheese. Dot the top with small pieces of the butter and the salt and pepper
Bake at 350 for 35 minutes or until the top is a nice brown.
Yummy

Mmmmm

My mother-in-law has a great way to make it!
Just combine elbow noodles, cheese (and alot of it (atleast 2-3 cups),any kind) and some milk (1/4 a cup) in a shallow cooking dish. She then bakes it for 25 minutes @ 375 degree's, then she top's it with a bread crumb mixture! Yum-O! Good luck!
