How do I stop emails staying in the SENT folder even though I have moved them to my personal folders? Also, how do I permanently change the font when I am replying to an email? Thanks!

Font - try going File -> Prefs -> User Prefs
I'd suggest switching to something simpler than notes though :)
Sent folder - no idea... delete them manually?
