CHEESY SCALLOPED POTATOES



10 large potatoes, thinly sliced

2 large onions, chopped

2 cans cheddar cheese soup, condensed

1 cup milk



In a small bowl, combine soup with milk. In removable liner, layer one half the potatoes and one half the chopped onions; spread one half the soup-milk mixture. Repeat layering using rest of ingredients. Placed in base. Cover and cook on low for 6-8 hours, high for 3-4 hours or auto for 5 hours.

This is my favorite crockpot recipe, and it's my own. It is very good. A friend once told me that I should try to market it!!!!

Green Bean Chowder

I envision eating this in a rustic-type bowl while sitting in front of the fireplace in a log cabin on a cold winters day! This is very easy to make and most of the ingredients you will most likely have on hand. I'm just not sure if you would consider this a chowder though. I use a 5-qt crockpot when making this.
Makes: 6 - 8 servings
Prep Time: 30 minutes
Cook Time: 6-7 hours
Ready In: 7.5 hours

INGREDIENTS:
2 cups ham; diced into bite size pieces
4 potatoes; diced into bite size pieces
4 cups total frozen vegies; (green beans, peas, carrots, snow peas, etc.)
1 large onion; cut how you like
garlic; how ever much you like
1 can cream of mushroom soup
4 TBSP milk
1 cup sour cream
1 cup water
basil, oregano, salt, pepper, etc.
1 28oz. can diced tomatoes with juice

DIRECTIONS:
Mix mushroom soup, milk, sour cream, water, and spices in LARGE bowl. (I only have a 5-qt crockpot so I had to mix it in my huge roasting pan! If you have a larger size, you should be able to mix it in the pot.) Then mix in ham, potatoes, vegies, onion, and garlic. Put into crockpot. Pour can of tomatoes with juice on top of other ingredients. Cook on low heat for about 6 - 7 hours.
