Google for "level switch". You will find dozens of companies selling these devices. Depending on the size you may want a level switch with a transmitter so you can measure the level remotely.

Corys don't like salt much. I once added salt to their tank (for a sickness) and they panic and darted around frantically. Had to do a huge water change. Only add salt if your fish are sick. Depending on plants, mid to high light plants don't really stand a chance with salt. I have salt added to my killies (1 1/2 tsp per 10g) and the only plants that can deal with the salt is java moss, java ferns, vals, hornwort, crypts, and anacharis, that I've tried. My tiger lotus, ludwigia and others did not stand a chance. I would think that adding a little won't make a difference and no point in adding it.

Go to the Kobold website and pick one out. For that application I'd use one of the bubbling type. It measure the back pressure on an air line to the bottom and are pretty accurate and aren't effected by surface debris.

Look at a toilet water tank, where the float establishes the level at which the water is shut off.

A simple float with a measuring sstick is the most reliable and old fashioned way.
