Western Potato Rounds
2 large unpeeled baking potatoes (about 1 1/2 lb.)
Vegetable oil
1 C. (4 oz.) shredded Co-Jack cheese
6 bacon slices, crisply cooked, drained and crumbled
1/3 C. green onion slices
1/4 C. barbecue sauce
1.Preheat oven to 450°F. Cut potatoes into 1/4-inch thick slices. Generously spray both sides of the potato slices with oil; place on 15-inch round baking stone. Bake 20 minutes or until lightly browned; remove from oven.
2.In batter bowl, combine cheese, bacon, and green onion. Generously brush potato slices with barbecue sauce; sprinkle with cheese mixture. Return potato slices to oven. Bake 3-5 minutes or until cheese is melted. Yields 24 rounds.
Tips:
•Leaving the peel on the potatoes will help keep the shape of the baked potato slices.
•The potato slices will cook more evenly when sliced to the same thickness.

If you have new potatoes, cut a strip of skin off around them so that each potato has some skin on each side. If you don't have new potatoes, cut some red potatoes into large pieces (1-1.5"). Toss them with olive oil, garlic, rosemary and kosher salt. Pop them in the oven until they are soft when you stick a fork in them.

You would need:
6 medium potatoes
1 cup milk
1/2 cup fresh Parmesan cheese
1 chopped onion
1/2 cup of chopped bacon bits
(they sell minced real bits in a jar) Hormel
2 tbs. butter
salt/pepper to taste
Heat oven about 350.
Peel potatoes and slice evenly.
chop or grate onion
combine all ingredients and bake for one hour or until softened
You could cheat and boil potatoes slightly to soften before baking.
You could also add any other of you favorite spices/meats
Hope that helps.

Wrap a potato in tin foil and put in a 350 degree oven for about an hour. Before you wrap it up though, make sure you rub oil on it and poke it with a fork a couple times. This makes for faster baking and the skin won't dry out....
Happy baking! !

Cut red potatoes into cubes. Coat them with a mixture of mustard, garlic powder, onion powder, soysauce, and hotsauce. Put in a baking pan cover with foil and bake.
Slice russet potatoes put in baking dish with salt and pepper. When almost done add some velveeta cheese on top.
Slice like french fries and bake with olive oil, salt, pepper, even old bay.

my husband loves these but they are very unhealthy. Peel potatoes put them in a pot of boiling water with a bit of salt cook until tender, remove from pot of water and place in a baking dish with some butter, garlic powder, thyme and oregano or any spices you choose and bake them at 350 for about 30 minutes or until the tops of them start getting a bit brown. When you take them out each person can dress them up as they choose (sour cream, cheese, bacon bits etc.
