My husband would probably say it's my lasagna, but I would have to say my signature dish is Risotto. You can do so much with it. I make a wild mushroom risotto, spring vegetable risotto, fall zucchini & squash risotto, seafood risotto. After you make it once or twice it's quite easy to catch on and vary with your own ideas.

3Tbsp. olive oil
3Tbsp. butter
1/4C chopped shallots
1 - 1 1/2 C chopped mushrooms (i.e. cremini, oyster, porcini)
1 C Arborio rice (Italian long grain rice)
1/2C dry sherry or white wine
2 14oz cans vegetable or chicken broth (warm)
fresh grated parmesan cheese (optional)**

Heat butter and olive oil over med-high heat. Add shallots and saute for about 1 min.
Add mushrooms and saute until tender and juices start to seep out (about 6 min.)
Add Arborio rice and stir in until coated.
Add sherry and reduce head to medium. Let simmer until juices are absorbed.
Start adding the broth 1/4C at a time, each time stirring and let simmer until juices are absorbed.

Remove from heat, stir in parmesan cheese and serve!

I would have to say it's my pasta sauce. I love to take my time and make a large pot on Sundays. I chop the onions and garlic by hand. I crush the tomatoes by hand. I always use a good quality olive oil. I guess any dish you make can be a specialty when you put love into it.

I cook from scratch. My husband loves everything, but it would have to be my shrimp and angel hair pasta dish. Now, I'm hungry reading all of your dishes. Growl, Growl goes my stomach.

Sweet & spicy shrimp over rice. The rice is the longest thing to prepare. The sweet & spicy shrimp takes only a few minutes and family and friends rave about it.

My wife requests my tomato-basil chicken with angel hair pasta. It is a simple dish.

I prefer to make my grilled salmon with herb rub served with rice pilaf and veggies. yum.

I make really good chicken marsala and a superb pennette (the short smaller penne) al salmone. Delicious and incredibly fast!

Surf & Turf. Lobster tails with drawn butter and Steak stuffed with bleu cheese and topped with garlic butter. It is so good!

My husband says it's my homemade enchiladas, or crab bisque. But his favorite of mine will always be my beer battered cod.
