This has been troubling me. I sometimes boil them and pour olive oil on them after - not bad, but this wastes the olive oil that toast dont soak up.

I never tried olive oil on fried or scrambled eggs though - have you?

Make mayonnaise with Olive oil and egg yolks, then use it mixed with hard boiled eggs and mustard and cress as a sandwich filling or use it with a green salad or baked potato filling.
Doubt that you will get a higher ratio of olive oil to eggs than this.

I always fry my eggs in olive oil, and you can always fry the bread in the oil that is left in the pan rather than toasting it.

I cook fried eggs with olive oil. I got a spray bottle from williams sonoma that is specifically for olive oil. You pump air into it, and it creates a spray can. Or you can pour about a tbsp in your skillet first before adding the eggs. I think it gives them a better taste and its not vegetable oil - its olive oil which is better for you anyway. You dont even need much. I think that you could do the same with scrambled eggs, just add a tsp then scramble them. Hope this helps.

Fry your eggs gently, over easy; spoon the hot oil over the yolk until a white film appears. Scoop out the egg and add just a tiny spoonful of the hot oil on your plate, to soak your bread in. And Please use a good, wholegrain bread for dipping!
I've never eaten fried eggs any other way. Also a good oil for omelettes and scrambles. The taste and aroma of hot olive oil are unbeatable.

Simple instead of using butter use olive oil to scramble your eggs in the skillet.

I've cooked eggs with olive oil out of the spray can,they say
olive oil is better for you than butter or cooking oil.

I make toast with olive oil. I cook my wife's fried egg in olive oil. I make my egg-white omelette with olive oil. It infuses all of these with that wonderful, deep flavor. Butter tastes horrible to me, now.

Eww no, too much oil! What is GORGEOUS though, is boiled egg with runny yolk, lightly drizzle asparagus tips with olive oil and dip them into the egg, mmmmmmmmm!

Yes to scrambled. Works great, better if you dice a little onion and garlic too, a little fresh basil.
