I hate veggies too but i make a lasagna in a big pan like 9x13 and layer in shredded carrots zuchinni,mushrooms, and eggplantand then sauce and cheese as usual. Spinach is good in this one too and can be folded into the ricotta cheese. I eat what i can and freeze the rest for my wife to take to work for lunches.

You can use different vegetables in an "au gratin" plate.
All you need is some butter, flour, milk and cheese.
You heat up about a tablespoon of butter, add the same in flour and move around until browned. You then add milk little by little until you've got the amount of sauce needed. (It'll thicken as it "cooks")
I can't give exact measurements as you have to play it by ear, depending on how much sauce you need.
You put the veggies you want in an oven proof dish, (can use potatoes, leeks, cauliflower, etc, etc.) , pour the sauce on top, then sprinkle with cheese.
You bake in a hot oven until brown and bubbly.

I'm in a simlar boat. I try to incorporate a vegetable in every meal. One of my faves is a tuna wrap. I take a tortilla, lettuce out of a bag, tuna out of a can or the StarKist packs, some feta cheese, and your favorite salad dressing. You can make it on clingwrap, so the only dish is a fork. It's quick, easy, and healthy! I eat this probably 3 nights a week.

hi chef dekannwarri on the case again so you want simple but taste recipes for thos vegetable dishes well heres one to think about
why not have nutritional drinks that you can pop in you lunch bag in a bottle or flask
for example carrot juice
stand by for a fabulous but simple recipe
3lb carrots
4oz sugar
table spoon of nut meg
table spoon of cinnamon
1 pint milk
half a pint low fat cream
2oz butter
boil carrots till soft then put in blender or food processor blend then let contents cool . add all the remaining ingrdeients and blend again in processor then chill add more sugar if needed.
very healthy drink .

Eat as a soup chunky or liquidize for smooth. It makes a great curry base sauce if you want to know my recipe email me. You can also add some to all gravy's.
Ingredients.
3 large onions
1 large or two small green peppers
1 bunch of celery
½ head of green cabbage
1 leek
2 tin chopped tomatoes
1 packet of French onion soup (any brand)
3 vegetable stock cubes (I use oxo)
Cut all vegetables into bite size pieces if your not going to liquidize.
Place all in a large pot add enough water to cover.
Simmer until vegetables are cooked add more water if necessary.

When home, make shakes in a blender, and add a slice of beet, some celery, and parsley.
Also if you pulverize vegetables in a blender, drink the result or cook up as sopup.
Also, eat vegggie burgers.

the best way to eating veggies is like eating home cooked veggies that have flavor such as green beans and corn and like veggies that are good on the go would be carrots and cucumbers dipped in rach dressing and dont forget the celery i think they're good like that, and we all have our own opinions. i wish you the best of luck in trying out new veggies!

you can always try V-8 juices - their smoothies are awesome and the v-8 fusion is delicious as well - an easy way to get your veggies w/o having to cook or eat them just drink them :)
i prefer the strawberry/banana smoothie flavor - and the peach-mango.
but if you want something you can throw in your lunchbag then i recommend baby carrots and ranch dip as a snack - check your local grocer in the produce section - they have lil premade snack packs of carrots and ranch, apples and carmel and other quick healthy snacks :)
