First thing you need to know is that you can't just set up anywhere, you need to get permission if its private property. If you want to sell in the fairs then you have to apply to them. You would do well to come up with a different type of food than burgers, anyone can sell burgers, the fairs want something different. Healthy eating should be promoted.
Check out all the events in and around your area, see if they would be interested in a food wagon, if they already have one see if they are happy with it. Ya gotta get out there and sell!

You need a vehicle that will pass all city and state enviromental health inspections It needs to contain refridgeration and cooking or warmers. It will also require plumbing for hand washing sinks.You will need permits, and business licences. You will need to establish that this service is needed in the area that you would like to conduct business in, and establish credit with a reputable food wholesaler.It is very complicated and you should have the advice from someone that has done this before.Contact your local S.C.O.R.E. office they can be found through the Small Business Admin, the are retired professionals that help people entering into their own business.Because of the high amount of risk involved in food businesses, it is very difficult to get financing,be prepared to use your own money or plan on a lengthy loan process.
