For a beautiful, expensive dining experience, go to Indochine restaurant in California Tower, Lan Kwai Fong on the island, the best Vietnamese resto there.
Another good one is the old Peak Cafe if it's still there, the new one is a bit glitzy but has better views I suppose.
Some good seafood restos out on Lamma island, where I used to live, Sok kwu wan is better than Yung shue wan where most expats live on the island. It's a really nice walk across the island from Yung to Sok, if it's a nice day.

Radish cake will be more like daikon that had been pan-fried. Chicken feet, has a savory sauce, but not much meat. Pig ear, I've never tried Cow tongue taste like normal beef, but a bit tougher. Cow tripe is good, and has a nice sauce, depending how you get it. The sesame ball is very good. I recommend these: Sweeter: Custard bun Thousand layered cake Mango pudding Tofu pudding thing, with a ginger and honey sauce Egg custard tart W/ meat: Shrimp dumpling Steamed beef meatballs Glutinous rice with chicken Spare ribs in black bean sauce BBQ pork bun (steamed or baked) Baby octopus with seaweed Jellyfish Shark fin soup ( no, this is not the reason why sharks are endangered ) Fried shrimp balls I recommend drinking a tea, instead of sodas, because it brings out the taste of the food better. Gupu is what I prefer. It's pu-er tea with chrysanthemum

For a true HK experience, try any "tea and meal" HK style cafeterias. The general characteristics of a good one are,
Crowded at all time. Menus with lots of set combo lunch and suppers. They serve sandwiches, noodles, rice, snacks, mixed ethnic and western food. Abundnant presence of students. These diners are all over everywhere, if you are in Mong Kok and walk 10 blocks or so. You should come across one.
Don't forget to try the HK style hot "milk tea" It's one of the most unique taste that represents HK and not china in general.

If you ask me for all the addresses, it will be a whole list. The list that the other users give you are good enough. However, I would like to add the restaurents in Yuen Long.
Especially at night after midnight, they got the best food there.

Anywhere from street stalls, corner snack-bars, or in HK style cafeteria that you will find almost everywhere, like said above, and mostly frequented by locals. Stay clear of glitzy restaurants unless you are on a good expense account, they are expensive although most mentioned by other answerers have above-average food and service.

specialises for seafood , steamed groper , lobster and abalone
tea house
luk yu tea house at 77 wellington st , central. this old style tea house and the dimsum is very good

You can try Jumbo in Aberdeen, various reastruants in Wanchi, some in Sai Kun, which u actually eat fresh seafood and noodle shops all around Hong Kong city center
