I have a fear of any homemade canned food, if someone brings me a jar of anything I throw it away, I just think it it full of bacteria.

Sorry to hear that.....my mom and grandma make the best vegetable soup.....you dont know what your missing.
And actually...it's probably safer than the stuff you buy in a can at the grocery.....at least at home...you know whos touching everything.....

Home canned food which has been processed in a "pressure cooker" should be O.K. Elderly people sometimes fall back on the older process of "water boil" --- especially for acid-type foods like tomatos. This is more likely to have harmful bacteria. One function of a pressure cooker is to raise the boiling point of water well above the "normal" 212 degrees --- as high as 240 or more. With the old "water boil" or "cold pack" process, I doubt whether the food in the middle of the jars actually gets to 212 degrees, although people used that method for years with pickles (salt & acid) or other foods naturally acidic. I am 82 years old and ate a lot of "cold packed" food while growing up.

All you have to do is check the seal. If it's loose, or the top makes that popping noise like when you open a jelly jar and you can push the top of the lid up and down, then throw it away. If the lid is tight and you have to pry it off, then you know that it has been sealed correctly and you don't have to worry about bacteria. Homecanned food is actually better for you because they don't have all the preservatives in them like grocery store canned food.

unless i saw the person who made it actually knew they ate it i would worry too. theres lots of bacteria that can be found in improperly canned foods. i would never ever let that person know i wouldnt eat it, just say thankyou and dump it later. mistakes are easy to make when canning food. and sometimes people are rushed when they need to make so many for gifts.
