anybody have a recepe for nice fishcakes?

Take the salmon out of the can. Take the bone out of it. Using flour, raw egg (it will cook when you cook them), and onions, make little cakes out of them. Set your oven to 350-450 degrees. Cook them until they're golden brown (about 30-45 minutes). Although my Mother has made them like this, I've never tried them with a hint of cayenne or jalepeno. If you want something with a little hot flare, I'd add those as well. Add salt and pepper to taste to the mixture and/or after you make them. MMM! They're wonderful!

This is for canned salmon, but you can also use fresh.
1 14 3/4 oz. can salmon, undrained
1/4 cup, plus 2 Tbsp. mayo
1/4 cup dry bread crumbs
1/4 cup chopped green onions
1 egg white
1 Tbsp. lemon juice
1 tsp. seasoned salt
2 tsp. butter
1 tsp. Dijon-style mustard

In med. bowl, combine salmon, 1/4 cup mayo, bread crumbs, green onions, egg whites, lemon juice, and seasoning. Mix well. Shape into four 1/2-inch thick patties. Melt butter over medium heat in large skillet. Add patties.Cook 3 - 4 minutes per side or till golden brown. Meanwhile, combine remaining 2 tablespoons of mayo and mustard. Serve sauce and lemon wedges with patties.

I substitute the seasoned salt with lemon pepper seasoning and like that better than the salt. I also have served the patties with a lemon cream sauce and that is really good, too.

Lemon cream sauce

2Tbsp. butter
1Tbsp. lemon juice
1 egg yolk
1/4tsp. salt
1 cup cream

Melt butter on a saucepan; gradually stir in cream. Bring to a boil, stirring often. Boil 5 minutes. Reduce heat. Stir a small amount of cream mixture into the egg yolks, then slowly stir cream mixture back into the saucepan. Add salt and lemon juice. Cook on low heat for 2 minutes, stirring constantly. Pour on salmon patties.

as you cook 2-3 potatoes to make mash, put your salmon (1 fillet for this recipe) in a steamer on top unil it is cooked, mash pots add an egg yolk grated cheese and chopped chives ( for luxery add a few prawns, chop then or they ruin the shape of the cake) mix all together, form cake, brush with egg wash roll in flour or bread crumbs shallow fry until brown- remember all ingrediants are pre cooked so dont cook to long or the cake will go too soft and you will have trouble removing from pan- makes 4 cakes

Simple recipe:

Canned salmon
1 egg
salt, pepper to taste
1/4 Cup of flour
1/4 Cup of cornmeal

Mix together. Add a little oil to a pan, fry until both sides are browned.

muramsey1's recipe has almost exactly the same ingredients as mine, but there is a difference in the way I cook them. Her recipe says to make 4 half inch thick patties. I make my patties much smaller.....make them about 2 inches in diameter and as thin as possible, about 1/4 inch thick if you can. They will cook very quickly and be evenly cooked all the way through. Just the way I prefer them.

4 med potatoes, boiled and mashed, add tin of salmon, and chopped parsley, form mixture into shapes, flour lightly and fry till golden, yummy

salmon make good fish cakes....mash spuds cook fish mould tegether into round ball flatten and fry till golden brown .............enjoy
