cause i thought i did. i thought it was smooth enough as instructed but it turned out to feel gritty (grr) and not really nice. how do you know when it's just right?

Mixing may be only one of the causes. It could be that the grainy texture is due to the ingredients. Good Luck!

I don't know what you baked, but---. If it involved mixing sugar and butter or shortening you probably didn't "cream" the ingredients well enough. (That means to mix those ingredients for a long time, until they are creamy)
