Hi, just a quick question for you guys. Coud anyone tell me how i make the soft cheese sauce that you get with nacho's when you go to the cinema or restaurant etc? I have tried my hardest to make it and i just end up with lumpy sludge! lol. If you could tell me how to make it and what ingredients i need that would be great!
PS I won't blame you for the weight gain either! lol.

NACHO CHEESE SAUCE

1/4 c. chopped green pepper
1/4 c. chopped red pepper
4 to 5 cloves garlic, minced
2 scallions, minced
1 tbsp. olive oil
2 tbsp. butter
2 tbsp. flour
1 1/2 cups milk
1 c. cheddar cheese, shredded
1/4 teaspoon Tabasco sauce
2 tbsp. minced jalapeno peppers
1/4 teaspoon salt
Pinch cayenne pepper
1/4 teaspoon paprika
nacho corn chips

Mix together peppers, olive oil, garlic and butter in a saucepan.
Sprinkle in flour, pour in milk and stir until mixture simmers -- do not allow to boil. When mixture begins to thicken, stir in the cheese and remaining ingredients, Simmer on low heat an additional five minutes or until cheese is fully melted.

Serve with nacho chips.

NACHO CHEESE DIP
Kraft introduced Velveeta in 1928, and its special cooking properties quickly caught on: When melted, it was as smooth as velvet (hence the name), and it would never curdle when heated. While many Americans today prefer regional or handmade cheeses, a lot of them still secretly indulge in a little Velveeta. After all, Grandma’s macaroni and cheese would never be the same without it. Velveeta makes this dip unbelievably creamy, too; scoop it up with tortilla chips, or try it in tacos.
1/2 cup beer
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1 16-ounce can refried beans
1/2 cup purchased chunky hot salsa
1 16-ounce package Velveeta cheese, cut into 1/2-inch pieces
1/4 cup chopped fresh cilantro
Tortilla chips




Combine beer, cumin, dried oregano and garlic powder in heavy medium sauce-pan. Bring to simmer. Add beans and salsa; stir until heated through. Add Velveeta cheese; stir until cheese melts, about 3 minutes. Stir in cilantro. Transfer to bowl. Serve warm with tortilla chips.

I use Campbell's Cheddar Cheese Soup. Put it in a bowl and microwave till bubbly. Easy and quick. The kids always like it with warm nacho chips. I do too!

Buy a cheese sauce mix from your local supermarket, follow the instructions, melt in a load more grated cheeese and enjoy with nachos

MEXICAN CHEESE DIP
1 (2 lb.) loaf Velveeta cheese
2 lb. lean ground beef
1 lg. jar salsa (your choice)
1 packet taco seasoning mix
2 tbsp chili powder
2 tbsp garlic salt
3/4 c. water
Tortilla chips
Brown ground beef and drain. Add taco seasoning and water. Simmer for 10 minutes. Melt Velveeta slowly, either in microwave or Stove Top. When melted. Add ground beef mixture and jar of salsa. Cook slowly over low heat for 20-30 minutes. Serve warm with tortilla chips.

my guess is if you end up with lumpy sludge...your melting cheese and adding flour at the end..........add more milk with your cheese......and sift the flour in a bit at a time.....if it goes lumpy....add more milk and keep beating it till smooth....if your arm gives up...whack it in the blender

go buy Chez whiz....melt in the microwave for a bit...VOILA....yummy yummy
