INGREDIENTS
1 (750 milliliter) bottle Irish whiskey
8 3/4 ounces milk chocolate
2 (14 ounce) cans sweetened condensed milk
2 (12 fluid ounce) cans evaporated milk
2 1/2 cups heavy cream
1/4 teaspoon instant coffee granules
DIRECTIONS
Pour a small amount of whiskey into a large bowl. In the top of a double boiler, melt chocolate, stirring constantly until smooth. Mix the melted chocolate with the whiskey in the bowl. Gradually stir in the sweetened condensed milk and the evaporated milk. Stir in the cream, instant coffee granules, and the remaining whiskey.
Pour mixture into 3 (750 ml) bottles, seal and store in refrigerator. Best if kept at least 1 month before using. To serve: shake bottle well, serve in small glasses over crushed ice.

I thought it would be good to share my secret - I make my own Baileys Irish Creme for a fraction of the cost to buy it! In this blog I have also included recipes for Irish Coffee, Corned Beef & Cabbage, Irish Soda Bread, Irish Potato Casserole and Irish Potato Farls.
The Baileys is really good. I recommend using “Powers Irish Whiskey”. It is a little higher end (about $20 for a fifth) but it makes a big difference. You will save in the long run because you can make 10 times the amount of Baileys!


Homemade Baileys Irish Cream
· Ingredients:
· 1 cup light cream
· 1 (14 oz.) can sweetened condensed milk
· 1 2/3 cup Irish Whiskey
· 1 teaspoon instant coffee
· 2 tablespoons chocolate syrup
· 1 teaspoon vanilla extract
· 1 teaspoon almond extract
Combine all ingredients in a blender and blend at high speed for 30 seconds. Place in a tightly sealed bottle and refrigerate.
Serving Ideas : Shake well before serving. NOTES : Liqueur will keep for 2 months if refrigerated.
However, you can play with different variations. Try using your favorite whiskey or add a flavored instant coffee.
This recipe for Bailey's Irish Cream serves/makes 4.

IRISH CREAM LIQUOR #3

(Makes a pitcher quantity)

1 3/4 cup Irish whiskey
14 oz. condensed milk
1/2 part whipped cream
4 eggs
2 tbs. chocolate syrup
2 tsp. Instant coffee
1/2 tsp. almond extract

Blend (use blender) all ingredients until smooth. Store tightly covered in refrigerator. Shake before serving. Keeps up to one month.

use double volume of irish cream of one volume of whisky and stir it with couple of ice cubes in a large glass
