I've always read that gym buffs (particularly men) never get satisfied with their size ( the muscle mass gained) and always already feel small after only a day or two of not being able to work out.

I suppose on some level it's addictive.It's habit forming to say the least.Many bio chemical processes take place during an intense exercise routine.Personally I think the increase in endorphins is far more addictive than the gains in size.As far as taking time off and so on,I do what's right for my body every time.
It makes no sense for me to train any single body part (except abs)more than once per week.My work outs are very intense,therefore it takes my muscles that long to repair.You can look at the psychological addiction of steroids to reinforce your point.Everyone I know who says they'll only do it once has never stuck to their word.They taste that strength and see gains beyond what you can imagine,then they'll do it over and over.I have specific goals in my training,I don't let addiction govern what I know I should do though some will.

I think it is. From past experiences (I used to work out at a friends house 3 days a week) I couldn't get enough. I made big gains quickly (without supplements, shakes, or anything else) and loved to see how big I was. It got to a point that I would do max-outs in the evening and defining work in the morning. To make a long story short, I gave it up to spend more time at home with my wife and kids, yeah I feel small but I'm still a big guy.

It is hard to get started and actually stick with working out for a few months, but after that is can be addictive

Working out is not addictive in itself. The addiction is due to a perfectionist tendency to build a perfect shape they have in mind.

Yes working out is addictive, this is a good thing as long as you don't over do it!
