If you cut the pumpkin open and scoop out the seeds, then cook the pumpkin, discarding the rind, it will make pulp that you can use in pumpkin bread.
If your pumpkin pulp is a bit watery, you might want to cook it on the stovetop until the water evaporates from it, or else drain it wrapped in cheesecloth.
It is best to use the little pie pumpkins (also called sugar pumpkins) to get the best flavor.
If you do have extra pulp from your pumpkin that you don't need right away, you can easily freeze it in ziplock bags. This is really important if your pumpkins look like they won't last until you need to cook with it. Check your pumpkins for soft spots and if you find them, cook the pumkin right away.
