If you cut the pumpkin open and scoop out the seeds, then cook the pumpkin, discarding the rind, it will make pulp that you can use in pumpkin bread.
If your pumpkin pulp is a bit watery, you might want to cook it on the stovetop until the water evaporates from it, or else drain it wrapped in cheesecloth.
It is best to use the little pie pumpkins (also called sugar pumpkins) to get the best flavor.
If you do have extra pulp from your pumpkin that you don't need right away, you can easily freeze it in ziplock bags. This is really important if your pumpkins look like they won't last until you need to cook with it. Check your pumpkins for soft spots and if you find them, cook the pumkin right away. Otherwise, store the whole pumpkins in a cool, dark, dry place.

Preheat oven to 300 degrees F (150 degrees C).
Cut pumpkin into small manageable pieces and cut off pith and seeds.
Place cut pumpkin skin side up in a large roasting pan. Add 1/4 water and bake uncovered for 1 hour or until tender. Remove from oven and allow pumpkin to cool.
When cooled, cut away skin and mash or puree. Use in any recipe that calls for canned pureed pumpkin.

Everything but the skin and seeds. Do not use the large jack-o-lantern pumpkins they are not good for cooking. Pick smaller pumpkins or use canned pumpkin,
