It is a roux based soup or stew. There can be many many variations. Base is onions, celerey, green pepper (the holy trinity), some garlic, a roux (equal parts oil/butter and flour), stock (depends on what meat you are using). Then you start adding meat and veggies. Duck and andouille, chicken and sausage or you can sub turkey, a variety of seafood (shrimp, crab, crawfish)
some people put okra in it . (personally i could skip the okra, it is really slimy unless you cook it down til its not slimy)

Gumbo is a spicy, hearty stew or soup, found typically on the Gulf of Mexico in the United States, and very common in Louisiana and the Lowcountry around Charleston, South Carolina. It is eaten year round, but is usually found during the colder months. This is due to the extended cooking time required, as a large pot full of simmering liquid will heat up the surrounding area.
The dish named gumbo usually consists of two components, rice and broth, and is usually made in large batches. Left-over broth is frozen for later use. Rice is made fresh daily. The rice is prepared separately from the broth, and the two are mixed only in the serving bowl.

but people use the word gumbo to talk about anything that is created by a lot of things.
like right now, the republicans are mired in a gumbo of sex scandals

Its a New Orleans favorite - a vegetable stew that may contain sausage or shrimp with okra as it's unique veggie in a tomato base. The spicier, the better!

It's a delicious stew made with lots of meat including crab and shrimp, and it's usually served with rice. I make mine very spicy with lots of fresh herbs.

In it's true form... It's got a lot of everything mixed up. It usually has shrimp or other seafood and greens and it's spicy!
