It is a roux based soup or stew. There can be many many variations. Base is onions, celerey, green pepper (the holy trinity), some garlic, a roux (equal parts oil/butter and flour), stock (depends on what meat you are using). Then you start adding meat and veggies. Duck and andouille, chicken and sausage or you can sub turkey, a variety of seafood (shrimp, crab, crawfish)
some people put okra in it . (personally i could skip the okra, it is really slimy unless you cook it down til its not slimy)
