Clams Casino

INGREDIENTS:
24 small clams in shell
1/4 cup butter, softened
1/4 cup chopped green onion
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped celery
1 tablespoon lemon juice
4 slices bacon, cooked until crisp and crumbled

PREPARATION:
Open clams; remove clams from shell. Wash shells; place each clam in deep half of shell. Discard remaining clam shell halves. Sprinkle clams with a little salt. Blend butter, chopped green onion, chopped bell pepper, chopped celery, lemon juice, and crumbled bacon.
Top each clam with a scant tablespoon of the butter and vegetable mixture. Arrange the clams casino shells on a bed or rock salt in a shallow baking pan. Bake at 425° for 10 to 12 minutes.

Clams casino recipe serves 8 as appetizer.

INGREDIENTS
24 large clams
2 tablespoons olive oil
1 tablespoon butter
1/2 cup minced onion
1/4 cup chopped green bell pepper
2 cloves garlic, minced
1 cup dried bread crumbs
4 slices bacon
1/2 teaspoon dried oregano
2 tablespoons grated Parmesan cheese
2 teaspoons dried parsley
1/4 teaspoon paprika
2 tablespoons olive oil
DIRECTIONS
In a small skillet, cook bacon until crisp over medium heat. Crumble, and set aside.
Wash clams. Place on a baking sheet. Heat in a preheated 350 degree F (175 degree C) oven for 1 to 2 minutes, or until clams open. Discard any that do not open. Remove meat from shells. Chop, and set aside.
Add 2 tablespoons oil and butter to a small skillet, and place pan over medium heat. Add onion, pepper, and garlic; saute until tender. Remove from heat, and cool.
In a medium bowl, combine bread crumbs, bacon, oregano, cheese, sauteed vegetables, and chopped clams. Mix well. Fill clam shells with mixture, and place on baking sheet. Sprinkle with parsley and paprika. Drizzle with olive oil.
Bake at 450 degrees F (230 degrees C) for 7 minutes. Serve.

24 cherry stone clams
6 cherry tomatoes
4 or 5 slices of bacon
1/2 sleeve of ritz crackers crushed finely
2 tsp minced onion
1/2 tsp minced garlic
juice of half lemon
1 tsp good white wine
2 tbs butter
scrub and open clams, i like to loosen the clam from the half of the shell i will be cooking it on. place on cookie sheet. pre-heat oven to 425.
melt butter in small pan and saute onions until soft. combine remaining ingredients except tomato and bacon. put a small amount of crumb mixture on each clam. slice tomato and place a slice on each clam. cut bacon in pieces to fit over each clam and place on each clam. you should stretch the bacon slices out a little before cutting, this will help it crisp up better. bake in oven until bacon is crisp, about 20-25 minutes.
