You could make Italian soda. Use club soda (very cheap!), ice and a few shots of flavored syrup - like raspberry, blackberry, lemon etc. There are over 20 flavors available.
You can find the syrup anywhere they sell coffee & tea. I usually get mine at Smart & Final or Cost Plus World Market.

Dole came out with a bunch of sparkling juices. they're just their regular juices but carbonated. also, you can also try apple juice and ginger ale. a nice sweet taste that has the color and look of champagne minus the alcohol and price.

Sparkling Cider -- its yummy and a good substitute. There are actually many varieties of it (I think Scuppernong is the closest to Champagne), but you can actually buy it inexpensively at Sams Club or Costco (my folks did this for a 70-person Anniversary party). In addition, cases can be bought online at web address included.

I was researching decoration ideas for my own wedding and I came across this page that suggests concocting your own drink with juice (bubbles or not) and maybe fruit wedges, but concentrating on coordinating your colors! What kinds of colors will you have in your wedding, the bridesmaids dresses, floral arrangments, center pieces etc..... while I dont have a precise idea of a drink, maybe this will help you to narrow down some "color coordinated" ideas.

Depending on where You are-there's a range of sparkling soft drinks called Schloer in the UK in white or red grape-if not in the UK,there should be something similar in sodas available to You.

Well, you can use Ribena syrup and add carbonated water. looks abit like red wine except for the bubbles =)
if you want it to look like champagne, just get Zappel from F&N.
