Your body has LOTS of involuntary actions. Search for anything that is controlled by the Autonomic Nervous System for a complete list. Some of it includes: heartbeat, producing hormones, digesting food, etc.

The autonomic nervous system controls involuntary processes. Breathing, and blinking, (which you can override, but not stop), but also bloodflow, circulation, digestion, heartbeat.

Pretty much your entire digestive, respiratory and circulatory functions are involuntary. You have nominal control over your heart rate, breath and excretion but only in a very limited fashion.

Those are all controllable by the body. I think what you are asking is for actions that one's conscious mind is unable to control. Some more examples include hormones in the brain, cellular respiration, dehydration synthesis, digestive activities and more.
