Halibut is a wonderful fish to cook. It has little oil and no overpowering flavor of its own. It takes sauces wonderfully, and the only thing you have to watch out for is to not dry it out during the cooking.
BAKED BLUE CHEESE HALIBUT
1/4 lb. blue cheese crumbles
1/2 qt. buttermilk
1 1/2 cups mayonnaise
1 cup water
1/2 tsp black pepper
1 tsp garlic, crushed
1/2 tsp white pepper
2 lbs. halibut, cut into 5 oz. pieces
1 red onion, sliced
blue cheese crumbles
Mix all dressing ingredients, add water to thin if needed. Chill.
(or use prepared blue cheese dressing of your choice). Preheat
oven to 350F.
In a large baking dish layer a thin amount of the blue cheese
dressing. Lay fish on top and add another layer of dressing on
top. Cover with sliced red onion and blue cheese crumbles.
Bake until fish flakes easily.
Chinese Halibut
Yield: 4 servings
4 lg halibut steaks, 1/2 lb each
3 tb finely chopped fresh ginger
6 tb finely chopped scallions
2 tb light soy sauce
1 tb dark soy sauce
2 tb chinese rice wine or dry sherry
1 tb Chinese sesame oil
1 1/2 tb minced fresh coriander
Lay the halibut steaks on a platter.
Puree the marinade ingredients in a blender and spread it evenly over the halibut steaks.
Allowto marinate for 2 hours in the refrigerator or 1 hour at room
temperature.
Approximately 40 minutes before you are ready to cook,
make a charcoal fire and, when the coals are ash white,
grill the halibut steaks for 5 to 8 minutes on each side, depending on their thickness.
Garnish with the chopped coriander and serve immediately.

I used to live in Alaska, and my dad recieved this recipe from the captian of the boat when he was halibut fishing once. I just love it. It's called "poor man's lobster"
Fill a pot with water (about a gallon).
Add 1 cup sugar, and bring to a boil.
Do not ever stir the mixture.
Add chunks of halibut, do not over crowd.
They will sink to the bottom, and then rise to the top when they are done.
It should take just a few minutes.
Remove with slotted spoon.
Remember to not stir the mixture.
Continue until all the halibut is cooked.
Dip in melted butter and eat!

Here's a recipe for you...
"Halibut with Bacon" - 4 servings
1/2 cup lime juice
1/2 cup chopped green onions (scallions)
2 tbsp. vegetable oil
2 tbsp. minced fresh cilantro (parsley)
2 tbsp. chopped seeded jalapeno peppers
1 tsp. salt
1/2 tsp. pepper
4 halibut steaks (6 oz. each)
8 bacon strips
In a large resealable plastic bag, combine the first 7 ingredients. Add halibut; seal bag and turn to coat. Refrigerate for 10-15 minutes, turning once.
In a large skillet, cook bacon over medium heat until cooked but not crisp. Drain on paper towels. Drain and discard marinade from halibut. Wrap two slices of bacon over the top and sides of each steak; secure with soaked wooden toothpicks.
Coat grill rack with nonstick cooking spray before starting the grill. Place halibut, bacon side down, on grill rack. Grill, covered, over medium heat for 4-6 minutes on each side or until fish flakes easily with a fork. Discard toothpicks.

mix flour,salt and pepper.lightly batter the halibut and fry.you will get that great halibut,no additive taste.

Just about any way you want, but as with any fish do not over cook it. When it just flakes it's done.
I prefer baked with a light butter sauce.
