Meatloaf - Microwave Oven Recipe


1-1/2 lb. lean ground beef
2 eggs - well beaten
1 medium onion - chopped
1/2 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup ketchup
Preparation -
Combine all ingredients except the ketchup. Place the meat mixture in a funnel type or bundt type cake pan made for the microwave. Or...Place a custard cup in the center of a microwave safe plate and arrange the meat mixture in a ring around it. Microwave for 5 minutes on full power, then for 10 minutes on 50% power. Top with ketchup and cook for 2 to 4 additional minutes. Let stand for 5 minutes before serving

Quickest way.. Depending on how many people you have, buy the meat of your choice. I personally use turkey, but for example, ahead of time, hard boil 2 eggs....I use 1 lb ground turkey, put that in a large bowl, add 1 egg (raw not the boiled ones), 3/4 cup seasoned bread crumbs and mash it all up good with clean hands. From there, I put it in an oven safe dish, shape it like the loaf, make a channel in the middle, add the 2 hardboiled eggs and close it up. Cover the raw loaf with spaghetti sauce and bake it at 375f for about an hour. This makes a great Italian meatloaf that is easy and quick

I know I'm really late with this recipe...but anyways,it's here!!!

EASY ITALIAN MEATLOAF

2 1/2 lbs ground beef or chuck
2 large peppers, red or green, coarsely chopped
1 16 oz can diced tomatoes
1 large sweet onion, chopped
4 slices bacon
1 1/2 cups Italian breadcrumbs
1/4 cup grated parmesan cheese
2 tablespoons minced or pressed garlic
1/2 teaspoon basil
1/3 teaspoon oregano
1/3 cup chopped fresh parsley (do not substitute)
1 teaspoon seasoned salt or beef bouillon powder
2 eggs
1/3 teaspoon ground black pepper
1/3 cup ketchup (or more as needed)
onion and garlic powder to taste

Preheat oven to 375 degrees.
In a large bowl, combine meat, eggs, seasonings and remaining ingredients except ketchup and bacon, adding breadcrumbs to mixture last. If meat is low in fat, add up to 1 tablespoon olive oil. Mix well.

Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder, salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking, being careful not to allow oven to get cold or additional cooking time will be required. If desired, cover with thinly sliced onions.

Bake uncovered 1 1/2 hours.

Variation: Substitute your favorite barbeque sauce for basting.

Get a pound of ground beef-remember it shrinks when you cook it. Get baby carrots, celery, onion, garlic, ketchup, worshteshire sauce, eggs, bread crumbs and adobo seasoning by goya from the store. Take a few carrots, celery, onion and lots of garlic and put them in the blender/food processor. Use a good handfull of it for the meat. You should see it throughout the meat when its mixed. beat the eggs. mix them in, add tablespoon adobo, add 1/2 cup worshteshire, a little less than a cup of ketchup-to keep it moist, bread crumbs until desired dryness. Bake 350 until its about 160 degrees. * Instead of ketchup, carrots,onion, adobo, ect mixture you could use a good quality chunky garden pasta sauce to cut time.

2lbs ground beef
1 egg
1/2 C ketchup
4 slices of bread shreaded
1 pack Lipton onion soup mix
1/2 C water
Mix it all up, wash your hands first, form it into a loaf
Put it in your loaf pan or a baking dish
Oven @ 350 for about 1 hour
If ya want to put tomato sauce or bacon on it then go for it.
Mashed taters go great with it too.

This isn't exactly a traditional meatloaf, but I do make it when I'm in a rush. Of course, it's pretty darn good, too.
Meatloaf Patties, Smashed Potatoes, and Pan Gravy
1 1/3 pounds ground sirloin, 90 percent lean ground beef
1 slice white bread, spread with softened butter, then cut into small cubes
1/8 cup (a splash) milk
1 egg
2 teaspoons grill seasoning blend, or coarse salt and black pepper combined
1/2 teaspoon ground allspice
1 rounded tablespoon tomato paste
1 medium onion, finely chopped, reserve 1/4 amount
2 pounds small red potatoes
2 tablespoons butter
2 tablespoons sour cream
2 scallions, chopped, whites and greens
1/2 cup milk
3-Condiment Pan Gravy:
2 tablespoons butter
1/4 medium onion, finely chopped, reserved from meatloaf mixture
2 tablespoons (a handful) all-purpose flour
1 to 1 1/2 cups beef stock
1 tablespoon ketchup
1 rounded teaspoon spicy brown mustard
1 tablespoon steak sauce
Serving Suggestions:
Baby Carrots, recipe follows
Dressed Tossed Salad

Place meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread cubes and dampen them with a splash of milk. Pour 1 beaten egg over bread and add seasoning or salt and pepper, allspice, tomato paste and onion to the bowl.
Combine the meat, bread and grill seasoning or salt and pepper and form mixture into 4 large oval patties 3/4-inch thick. Pan fry meatloaf patties in a nonstick skillet over medium high heat 7 minutes on each side under a loose tin foil tent. The tent will reflect heat and allow the steam to escape the pan.
Cover the quartered, red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to hot pan and warm stovetop to dry potatoes out. Add butter, sour cream, scallions, and milk to potatoes and smash to your desired consistency. Season potatoes with salt, to taste.
Remove meat loaf patties to a platter and return pan to heat. Reduce heat to medium and add butter and onion to your skillet. Cook the onion 2 minutes and sprinkle pan with flour. Cook flour 1 minute and whisk in 1 cup beef stock. Bring broth to a bubble. If gravy is too thick, thin with additional stock. Stir in condiments and remove gravy from heat.
Slice meatloaf patties and drizzle with gravy. Pile smashed potatoes along side and make a well in the center for sour cream or gravy. Serve meatloaf and smashed potatoes with baby carrots, or with a tossed salad dressed with oil and vinegar.
