If you air dry the chicken in the refrigerator for at least 24 hours you will have crispier skin. That means, after you remove the chicken from the package, place it on a rack over a plate or a small pan. Don't wash the chicken. It takes away flavor and any bacteria that you think may be on the chicken will be killed from the heat of the oven. Just let it sit there for a day. Then roast it in your favorite way. You'll have terrific, crispy skin. You don't need extra oil...
Also, cooking the chicken at high heat as opposed to a 350 will also crisp the chicken. Or you can start at 350 and raise the heat to 400-425 for last half hour.
This is a chef secret.

There's no healthy way to do this -- I'm warning you!!
Make sure you absoloutely DO NOT cover your chicken when you're cooking it. Otherwise it will steam instead of roast and the skin will be soft.
Second, rub the whole chicken with a couple tablespoons of butter or margerine before you put it in the oven. I usually do this before I put the salt, pepper and spices in as the butter/marg helps them stick better
Third, make sure you baste it during the cooking by taking the drippings/juice that comes off during cooking and drizzling it all over the chicken.
Bon Appetit!
