Salsa chicken -- fry up some chicken breasts, add some salsa, simmer until the watery-ness of the salsa is gone and serve over yellow rice.
Make up a couple of pounds of hamburger or ground turkey with some taco seasoning on the weekend -- good with canned re-fried beans for burritos one night and to make tacos with on another.
One of my favs -- it sounds weird, but every one loves it -- is to make homemade mac and cheese. Boil your pasta of choice. While that's cooking, make a package of pepper gravy from a mix bought at the store (some times called country gravy). Once the gravy is thick, add cheese (real cheese, not Velveeta) to make a cheese sauce. When pasta is done, drain and mix in cheese sauce. Add pre cooked ham, small smoked sausages, hot dogs or leave plain. Place in a casserole dish, top with cheese and heat in a 350F oven for 10-15 minutes. Good and you usually have enough for leftovers to take for lunch or to have for dinner another night.
Casserole recipes are usually fairly easy. Tasteofhome.com is a reliable website.
I'm a student, so I'm all about 30 minutes or less in the kitchen.

Chili Dogs!
Buy some canned chili,
NATHANS hotdogs (they are one of the best)
grate cheddar and jack cheese,
heat up chili in the pan, boil hotdogs
Add hotdog to bun, spoon chili over the top, sprinkle with the cheese, you can put it in the microwave for about 10- 15 seconds to steam the bun and soften up the cheese.
Teenagers and kids love this easy meal.
Fajitas are quick too
Slice and marinade carne asada meat, set aside, slice green and red peppers into strips, slice white onion into stripes
pout meat, sauce and onion in skillet and cook together, when meat is done put in peppers
Put mixture in flour tortilla with grated cheese and add tomato, guac if you like also. Fast and Good

Beef Stroganoff Casserole
1lb. hamburger (or ground turkey works as well)
1 pkg. egg noodles or other noodle
1 can sliced mushrooms, drained
1/2 onion, minced
1/2 tsp. minced garlic (about 1 clove)
1 cube beef boullion
1/3 cup water
1 can cream of mushroom soup
1 1/2 tsp. Worcestershire sauce
1 cup sour cream
1 cup shredded swiss cheese
In boiling water, cook noodles according to directions. Brown hamburger, drain fat, add the boullion and water, adding onion and garlic to soften. Add soup to meat mixture, mix well as it warms and thins. Add mushrooms, cooked noodles, worcestershire sauce and sour cream. Mix well and pour into casserole dish. Top with swiss cheese and bake 30 minutes or until cheese is bubbly.
