It should be the husband. If you wanted to get really proper it should read Mr. and Mrs. John Doe.

I would recommend using separate stationary for each spouse.

If you are writing thank you's or invites together as a couple, use just your last name on the stationary or even the initial of your last name. Just make sure both of you sign the letter and it should work just fine.
