I would guess that the buttermilk would be brushed on top prior to baking. I've honestly never heard of brushing with buttermilk but I have heard of using it as an ingredient.

But to your question... butter is usually brushed on after baking, like I said though I would guess it is brushed on before baking to create a crustier top.

I make biscuits a couple times a week, but have really never heard of brushing them with buttermilk. I don't put anything on mine...just the bench flour.,,,,,,,,,,,,but I do use buttermilk IN them.

I think buttermilk has much less fat and a tangier taste than butter, plus you won't get as much golden shine on your biscuits w/ buttermilk, because there's so much less fat.

Butter is butter (it's made from the fat that's in milk) and buttermilk is the liquid that's left from the milk after the butter is made (therefore, fairly fat-free)

I don't know what you're aiming for tastewise, so would be hard to say :)
