If you don't mind using storebought tortillas, they are so easy!

Heat your oven to 350. Layer refried beans, shredded cheese (whatever you like), olives, diced tomatoes, scallions and a couple little dollops of sour cream onto each tortilla. Make sure the tortillas are already on a baking sheet when you do this. They're a pain in the butt to move when they're not cooked.

Put the baking sheet in the oven for about 10-15 minutes, long enough to heat everything and melt the cheese.

You can also dice up some cooked chicken, pork, beef, turkey sausage, whatever meat you like & add that between the beans and cheese. Enjoy!

(Serve 'em w/ lettuce, guacamole & salsa or pico on the side)

Totally easy, just had them the other night.
Buy already made tostada shells in the ethnic aisle of your grocery store
1 can black beans
fresh salsa
sour cream
guacamole
mexican or taco blend of cheese
sliced black olives
iceburg lettuce
any other salad veggies you like

warm the shells in a 250 oven for at least 15 minutes while heating the black beans on the stove top. Once the beans are warm place about 1/4 cup in the bottom of the shell, place two generous handfuls of cheese onto the warm beans and top with the salad fixings. Place some salsa, guacamole, and sour cream on top and enjoy.

Similar to making tacos, here's how it's usually layered.

1. Crispy flat tortilla - take regular corn tortillas and pan fry in 1/2" oil until crispy or buy them from the supermarket.
2. Thin layer of refried beans
3. Taco meat - use the package seasoning mix to save time. McCormicks, Lawry's and Taco Bell brand are good.
4. Lettuce - shredded Iceberg lettude
5. Chopped tomatoes and/or salsa
6. Chopped Onions - I like white and green onions
7. Shredded Cheese: I prefer cheddar

Other additions include olives, sour cream and guacamole, if you like.
