Personally, for the wine sauce I use Petite Sirah (nothing fancy, a $9 - $12 bottle is good enough).

Of course. Chateaubriand is a specific cut of meat, I get it often. I treat it like a london broil, although it doesn't need to marinate as long, but the flavor is about the same. Toss it on the grill for about 7 to 9 mintes a side for medium. It is a great cut of meat!

have a greens salad of some sort as one of the start offs and a nice crusty loaf of bread cut up for appetizers i love fried cheese raviolis with marinara sauce, spinach and artichoke dip with garlic baked pita chips, a mini gourmet pizza cut up in slices any toppings you like i would do a spin on a dressed up chicken bacon ranch, (like a flat bread pizza) bruchetta with toast, loaded potato skins with cheese bacon chive sour cream, boneless honey BBQ wings, you can make a soup like a chowder or a bisque, or stuffed mushrooms yum! main dishes you can make a classic grilled steak or chicken steamed veggie and mashed potatoes, you could make chicken parm with pasta or fettuccine Alfredo with seafood or chicken, (some type of pasta dish) baked salmon and roasted potato's and a warm spinach salad, (for a fish dish) chicken or beef kabobs with onions and bell peppers over rice pilaff, a veggie and parmersan rissoto, stuffed eggplant with fennel sausage side of polenta, for your sides offer baked or mashed potato steamed veggies with herbs and butter, rice or couscous, hope i gave you some ideas to start on good luck!
